Bring a large pot of water to a boil over high heat
- 4 bell peppers, any color
- Salt
- 5 Tbsp extra-virgin olive oil
- 1 medium yellow onion, peeled and chopped
- 1 clove of garlic, peeled and chopped
- 1 lb of lean ground beef
- 1 1/2 cup of cooked rice
- 1 cup chopped tomatoes, fresh or canned (if using can, drain of excess liquid first)
- 1 tbsp chopped fresh oregano or 1 teaspoon of dried oregano
- Fresh ground pepper
- 1/2 cup ketchup
- 1/2 tsp of Worcestershire Sauce
- Dash of Tabasco sauce

Take a large non-stick skillet pan and coat with non-stick spray
- 1 package sweet Italian-style turkey sausage
- 4 bell peppers (red, yellow, green or orange), sliced 1/8 inches thick and then cut in half
- 1 very large sweet onion (Vidalia or Spanish), sliced 1/8 thick and then cut in half
- 1 (28 oz) can of Italian crushed tomatoes
- 3 tbsp of Italian seasoning
- 1/2 tsp of crushed red pepper flakes
- Salt and pepper to taste
- Fat-free non-stick canola spray
- Note: You can substitute hot turkey sausage.
