EGG****Arugula Salad with Stuffed Portabella and Poached Egg

17/05/15 - My creation. Very good if you have all the components on hand
- 2 cups arugula spinach blend
- 8 cherry tomatoes, halved
- 1/4 tsp. PC pepperoncini picante
- 2 teaspoons olive oil
- juice of 2 lemon wedges (or to taste)
- Maldon salt and freshly ground black pepper, to taste
- 1 portabello mushroom, cleaned
- 40 grams Woolwich spreadable goat cheese or other cheese of choice (I used a PC block feta, which upped the calorie count just a bit)
- fresh herbs, if desired
- 1 large egg, poached
- 1 slice prosciutto, broiled and crumbled (not strictly necessary)
- toast or croutons, to serve (I used croutons, which work fine)
HALIBUT*****Poached Halibut Steaks in Court Bouillon - 3 Points

We both liked this. Serve mine with a yogurt/garlic based sauce and Dan's with tartar
- BROTH:
- 2 cups water
- 1/4 cup red wine vinegar
- 1/4 onion, halved
- 1/4 carrot, in chunks
- 2 cloves garlic, unpeeled, halved
- sea salt, peppercorns, bay leaf, sprig thyme
- FISH:
- 1 6-ounce halibut steak, 1 inch thick, skin left on to hold it together
- salt and pepper
SHRIMP*****Three-Chile-Dusted Shrimp

20/03/15-VVG for both and quick and easy too
- 1 teaspoon cane or palm sugar
- 1 teaspoon chili powder
- 1/2 teaspoon ancho chile powder
- 1/8 teaspoon chipotle chile powder
- 1/4 teaspoon salt
- 200 grams/7 oz. peeled and deveined large shrimp, tails removed for ease of eating (this is half a bag of PC raw Black Tiger Shrimp - 16 - 20 count)
- 1 tablespoon olive oil
SALMON****Salmon Salad with Cannellini

We both like this and it's an easy, make-ahead, weeknight dinner
- 1 can Clover Leaf salmon, drained and flaked (120 grams)
- 1 can (19 oz.) drained and rinsed canned cannellini beans
- 1/2 cup sliced celery
- 1/4 cup minced fennel
- 2 sliced green onions
- 2 tbsp. minced fresh dill
- grated rind of one lemon
- juice of 1 lemon
- 1 tablespoon olive oil
YONANAS - Candied Ginger (w/Bananas)

1. Insert 1 frozen banana into Yonanas Maker 2
- 2 frozen over-ripe bananas
- 1/4 cup candied ginger
YOGURT****Skinny Peanut Butter-Yogurt Dip

This is yummy - makes a good work lunch with an apple
- 1/2 cup 2% Greek yogurt
- 1/4 cup peanut butter, crunchy recommended
- Optional to create Chocolate Peanut Butter Dip, add 1 to 2 tablespoons of unsweetened quality cocoa powder (haven't tried this)
- Sliced apple, to serve
ARTICHOKE*****Upright Artichokes (Carciofi Ritti)

Love this every time!
- 2 medium artichokes, cleaned and halved
- 1 clove garlic, minced
- 1 small shallot, minced
- 1/3 - 1/2 cup panko
- 10 grams shredded parmesan cheese
- 1 ounce prosciutto or pancetta, very thinly sliced and cut into slivers
- 1 ounce provolone or smoked cheese or parmesan
- 1 tbsp. chopped fresh parsley
- 1 tbsp. fresh basil chiffonade
- 1 tbsp. EVOO
- 1/2 cup or more chicken broth, as needed
- juice of 1/2 lemon
GREEN*****Tossed Side Salad - My Way

* Combine all ingredients and toss with dressing
- 2 servings
- 3 cups mixed baby lettuce
- 8 cherry tomatoes, halved
- 2 green onions, sliced
- 15 grams PC Calabrese Croutons
- 3 tablespoons Buttermilk Herb Dressing
