PUDDING****Egg Nog Rice Pudding

Yummy way to use up the leftover eggnog
- 1/2 cup arborio rice, cooked in 1 cup of water for 15 minutes
- 3 cups egg nog
- 1/2 teaspoon vanilla extract or one vanilla pod seeds extracted
- 1 pinch salt
- 2 tbsp. rum
- 1/8 teaspoon freshly ground nutmeg
- 1/4 teaspoon freshly ground cinnamon
- 1/4 cup craisins, optional, or try some golden raisins
- 1/2 cup heavy cream, whipped, divided as 1/2 cup for the pudding, 1/4 cup for garnishing pudding - OPTIONAL
GROUND TURKEY****Turkey and Spinach Ragù on Parmesan Polenta

- RAGU:
- 1/2 tablespoon olive oil
- 6 ounces ground turkey or sweet turkey Italian sausage, casings removed
- 1/2 cup finely chopped onion
- 1/2 cup finely minced mixed sweet peppers
- 2 garlic cloves, minced
- pinch of ground pepper flakes
- pinch each of dried basil and oregano
- 3/4 cup marinara sauce or cherry tomato sauce
- 2 cups coarsely chopped fresh spinach
- POLENTA:
- 60 grams/1/4 cup instant white or yellow polenta
- pinch of salt
- 3/4 cup chicken broth
- 1/4 cup 2% milk
- 1 tbsp. Becel or unsalted butter
- 2 tbsp. (10 grams) finely grated parmigiano reggiano
- pinch of freshly grated nutmeg
- salt and pepper to taste
- TO SERVE:
- Freshly grated parmigiana reggiano or pecorino romano
- Shredded fresh basil, for me
BREAST - Grilled Turmeric Chicken (ActiFry)

Combine the ingredients and marinate for at least 2 hours or overnight if possible
- 8 ounces chicken breast, cubed
- 1 tablespoon olive oil
- 1 tablespoon lime juice + zest
- 1 pinch ground coriander
- 1 pinch white pepper
- 1 large clove garlic, peeled and smashed
- 1 1/2 teaspoons fish sauce
- 1 teaspoon oyster sauce
- 1/2 teaspoon ground turmeric or 1/2 tablespoon fresh
- 1/2 tablespoon light or dark brown sugar or date sugar
- 1/2 teaspoon tomato paste
BEANS*****Rachel Ray's Creamy Spaghetti and Beans (Pasta e Fagioli) - 9 Points

This is basically vermicelli
- 1 tbsp. EVOO
- 1 cup chicken broth
- 1 ounce pancetta, diced
- 1 clove garlic, chopped
- 50 grams Catelli Smart Spaghettini
- 1/4 medium onion, finely diced
- 1 small carrot, diced finely
- 1 bay leaf
- 5-6 sprigs fresh thyme
- 3 - 4 tbsp. dry white wine
- 1/2 can aurora or fire-roasted tomatoes
- 1/2 cup Eden Organic Cannellini Beans
- Salt and pepper
- 15 grams grated Parmigiano Reggiano or Pecorino Romano cheese
- A generous handful of flat leaf parsley, finely chopped, for garnish

Everyone ranted and raved about this
- SAUCE:
- 12 servings, at least
- 1/4 cup olive oil
- 1 onion, diced
- 4 garlic cloves, minced
- Pinch kosher salt and freshly ground black pepper
- 1 pound pork neck bones (Tarini's doesn't have these - I used 2 lbs. of pork back ribs, which I had the butcher cut in half lengthwise, then cut into 2 or 3 rib pieces)
- 1 pound ground veal
- 1 pound ground beef
- 2 spicy Italian sausages and 2 sweet Italian sausages loose or removed from casings
- 1/2 cup dry white wine + a bit more
- 1 (28-ounce) can San Marzano tomatoes, with their juice
- 1 (14-ounce) can fire-roasted tomatoes, with their juice
- 2 bay leaves
- LASAGNE:
- 1 pound dried lasagna noodles
- 2 pounds whole milk ricotta cheese
- 1/4 cup chopped fresh flat-leaf parsley
- 1/4 cup chopped fresh basil leaves
- 1/4 cup chopped fresh oregano leaves
- 2 large eggs
- some fresh basil leaves (my addition)
- 1/2 cup grated Parmesan, plus more for final topping
- 1 pound fresh mozzarella cheese, grated or thinly sliced on the mandolin
MAHI - Mahi-Mahi with Orange, Avocado, and Red Onion Salsa

Using a small sharp knife, cut peel and white pith from orange
- 1 blood orange, Cara Cara orange, or regular orange
- 1/2 cup 1/3-inch cubes avocado
- 1/3 cup chopped red onion
- 2 teaspoons minced red or green jalapeño or Thai chili
- 2 teaspoons fresh lime juice
- 1 tablespoon chopped fresh cilantro, if you have it
- salt and pepper to taste
- 2 teaspoons olive oil
- 1 6-ounce mahi-mahi fillet
- sprinkle of mild chili powder

- 125 grams gnocchi or whole wheat gnocchi
- 2 tsp. EVOO
- 1 shallot, minced or thinly sliced (OPTIONAL)
- 1 clove garlic, minced or thinly sliced
- 12 cherry tomatoes, halved (if you're real ambitious and have the time, seed them)
- 1 tsp. tomato paste
- 2 tbsp. chicken broth
- pinch each of malden salt and pepper d'espelette
- 30 grams reduced-fat cream cheese or 1 tablespoon whipping cream
- 2 tbsp. fresh basil, chiffonade or fresh thyme
- 1 tablespoon grated parmigiano reggiano or pecorino romano

- 1/2 rice cooker cups white rice, such as jasmine or short-grain sushi
- 2 tbsp. white miso
- 1 Tbsp. mirin
- 1/4 tsp. unseasoned rice vinegar
- 2 5-oz. skin-on salmon fillets, preferably about 3/4 inch thick
- 1/4 cup loose-leaf green tea
- Kosher salt
- 2 medium scallions, thinly sliced (about 1/2 cup)
- 1/2 Tbs. toasted sesame seeds; more for garnish
COFFEE-Gingerbell Latte

1.Place all ingredients except garnish in a saucepan and heat just until warm
- 1 cup (250 ml) Silk Vanilla soy or almond beverage
- 1/2 tsp (2 ml) freshly grated ginger
