  • 1 large DOLE® Sweet Potato, peeled and chopped into 1-inch cubes (I used 8 oz. PC mini sweet potatoes with the skin on)
  • Salt and ground black pepper, to taste
  • 1/2 teaspoon ground cinnamon
  • 1 pkg. (200 grams) DOLE® Sweet Kale Salade Kit
  • 2 tablespoons pumpkin seeds (I used my chili lime seeds)
  • 2 tablespoons shredded Gruyere cheese (I used 30 grams Kraft Italiano Light 4 cheese blend)

  • 1/3 package(350 g) PC Kale & Cannellini Ravioli
  • 1 tbsp. unsalted butter
  • 1/4 tsp finely grated lemon rind
  • 1 pinch hot pepper flakes (optional)
  • Maldon salt and freshly ground black pepper, to taste
  • 1 tsp fresh lemon juice
  • 4 teaspoons grated Parmigiano Reggiano cheese
  • 2 teaspoons chopped fresh parsley or thinly sliced fresh sage
  • 2 tablespoons reserved pasta cooking water

  • 3 cloves of garlic, minced
  • 1 can fire-roasted tomatoes
  • 1 tablespoon fresh basil, chopped finely
  • 2 tablespoons fresh parsley, chopped finely
  • 1/2 teaspoon granulated sugar
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon pepper
  • 1 large parmesan rind
  • 4 1/2 cups chicken stock
  • 2 tablespoons unsalted butter
  • 1 1/2 tablespoons all-purpose flour
  • 1/4 cup milk
  • 1/4 cup heavy cream
  • 30 grams grated parmesan cheese
  • 9 ounces gnocchi, cooked per manufacturer's instructions (3 ounces per 2-bowl serving)
  • 8 ounces fully-cooked chicken breast, shredded or diced
  • grated or shaved parmesan and chopped basil, for garnish

  • SALAD:
  • DRESSING: (4 - 5 servings)
  • 1/4 cup 1/4 cup sweet chili sauce (I used half sweet and half hot - VH brand [if using another brand, watch the heat])
  • 2 tablespoons 2 tablespoons rice vinegar
  • 2 tablespoons 2 tablespoons lite canned coconut milk
  • 1/2 tablespoon 1/2 tablespoon Splenda brown
  • 1 1 garlic clove, pressed or finely minced
  • 1/2 tablespoon 1/2 tablespoon creamy peanut butter
  • 1/2 teaspoon 1/2 teaspoon ginger
  • 1 tablespoon 1 tablespoon lime juice, plus zest
  • 1 teaspoon 1 teaspoon fish sauce
  • 6 oz. 6 oz. shredded chicken (I used less than 4 oz., which was plenty)
  • 1/4 1/4 red pepper, sliced thinly
  • 1 small 1 small carrot, sliced thinly (I shredded it with the peeler)
  • 1 1 pickling cucumber, sliced thinly
  • 2 2 green onions, sliced on the diagonal
  • 1/2 1/2 jalapeno, seeded, thinly sliced
  • 1/2 medium 1/2 medium avocado, diced
  • cilantro to taste, torn (optional)
  • mint to taste, torn (optional)
  • basil to taste, torn (optional)
  • fresh Thai chilies to taste, thinly sliced (optional)
  • 4 cups 4 cups romaine lettuce, sliced, or other lettuce/green of choice, to serve

  • 1/3 cup wheat berries
  • 1 tsp. dijon
  • 1 tsp. champagne or sherry vinegar
  • 3 tbsp. EVOO (use the oil from the tuna confit if you have it)

  • pinch of red pepper flakes
  • 1 stalk celery, chopped
  • 1/3 cup onion, red or white, chopped (or substitute shallots or green onions)
  • 1/2 red pepper, diced
  • 1 small jalapeno, seeded and thinly sliced
  • 1 small red apple, diced
  • 6 oz. good-quality chunk tuna in oil, drained or, if you have it, leftover tuna confit
  • 3 cups mixed salad greens or arugula, optional (didn't use)
  • 6 grape or cherry tomatoes, halved (not sure what these added)
  • 1 avocado, diced
  • 1 hard-boiled egg, sliced (haven't used yet)
