- 4 scallions, chopped
- 1/2 tablespoon finely minced ginger root
- 1/2 teaspoon finely minced garlic
- 2 teaspoons extra virgin olive oil
- 1 teaspoon homemade Asian Chili Oil
- 1 teaspoon sesame oil
- 1 1/2 tablespoons soy sauce
- 1/2 teaspoon rice vinegar
- 1/2 teaspoon brown sugar
- 1 tablespoon Sesame seeds for garnish
CHOPS****Slow-Cooker Pork Chops

- 2 thick pork chops, approx 250g each
- seasonings of choice - peppercorns, herbs, onions, garlic, whatever you like
- 1/2 - 3/4 cup liquid of choice - chicken broth, beef broth, beer, etc.
- 1/2 tablespoon olive oil
- 1/2 tablespoon unsalted butter

- 1 large DOLE® Sweet Potato, peeled and chopped into 1-inch cubes (I used 8 oz. PC mini sweet potatoes with the skin on)
- Salt and ground black pepper, to taste
- 1/2 teaspoon ground cinnamon
- 1 pkg. (200 grams) DOLE® Sweet Kale Salade Kit
- 2 tablespoons pumpkin seeds (I used my chili lime seeds)
- 2 tablespoons shredded Gruyere cheese (I used 30 grams Kraft Italiano Light 4 cheese blend)
RAVIOLI****Ravioli with Lemon Brown Butter Sauce

12/08/15 - This was very good although 1/3 package is too much
- 1/3 package(350 g) PC Kale & Cannellini Ravioli
- 1 tbsp. unsalted butter
- 1/4 tsp finely grated lemon rind
- 1 pinch hot pepper flakes (optional)
- Maldon salt and freshly ground black pepper, to taste
- 1 tsp fresh lemon juice
- 4 teaspoons grated Parmigiano Reggiano cheese
- 2 teaspoons chopped fresh parsley or thinly sliced fresh sage
- 2 tablespoons reserved pasta cooking water

- 1/2 cup or so of canola or peanut oil

- 1 medium onion, diced
- 3 cloves of garlic, minced
- 1 can fire-roasted tomatoes
- 1 tablespoon fresh basil, chopped finely
- 2 tablespoons fresh parsley, chopped finely
- 1/2 teaspoon granulated sugar
- 1/2 teaspoon kosher salt
- 1/4 teaspoon pepper
- 1 large parmesan rind
- 4 1/2 cups chicken stock
- 2 tablespoons unsalted butter
- 1 1/2 tablespoons all-purpose flour
- 1/4 cup milk
- 1/4 cup heavy cream
- 30 grams grated parmesan cheese
- 9 ounces gnocchi, cooked per manufacturer's instructions (3 ounces per 2-bowl serving)
- 8 ounces fully-cooked chicken breast, shredded or diced
- grated or shaved parmesan and chopped basil, for garnish

- SALAD:
- DRESSING: (4 - 5 servings)
- 1/4cup1/4 cup sweet chili sauce (I used half sweet and half hot - VH brand [if using another brand, watch the heat])
- 2tablespoons2 tablespoons rice vinegar
- 2tablespoons2 tablespoons lite canned coconut milk
- 1/2tablespoon1/2 tablespoon Splenda brown
- 11 garlic clove, pressed or finely minced
- 1/2tablespoon1/2 tablespoon creamy peanut butter
- 1/2teaspoon1/2 teaspoon ginger
- 1tablespoon1 tablespoon lime juice, plus zest
- 1teaspoon1 teaspoon fish sauce
- 6oz.6 oz. shredded chicken (I used less than 4 oz., which was plenty)
- 1/41/4 red pepper, sliced thinly
- 1small1 small carrot, sliced thinly (I shredded it with the peeler)
- 11 pickling cucumber, sliced thinly
- 22 green onions, sliced on the diagonal
- 1/21/2 jalapeno, seeded, thinly sliced
- 1/2medium1/2 medium avocado, diced
- cilantro to taste, torn (optional)
- mint to taste, torn (optional)
- basil to taste, torn (optional)
- fresh Thai chilies to taste, thinly sliced (optional)
- 4cups4 cups romaine lettuce, sliced, or other lettuce/green of choice, to serve
- 1ounce1 ounce peanuts, roasted and chopped
TUNA****Wheat Berry and Tuna Salad

- 1/3 cup wheat berries
- 1 tsp. dijon
- 1 tsp. champagne or sherry vinegar
- 3 tbsp. EVOO (use the oil from the tuna confit if you have it)
- Maldon salt and freshly ground pepper
- pinch of red pepper flakes
- 1 stalk celery, chopped
- 1/3 cup onion, red or white, chopped (or substitute shallots or green onions)
- 1/2 red pepper, diced
- 1 small jalapeno, seeded and thinly sliced
- 1 small red apple, diced
- 6 oz. good-quality chunk tuna in oil, drained or, if you have it, leftover tuna confit
- 3 cups mixed salad greens or arugula, optional (didn't use)
- 6 grape or cherry tomatoes, halved (not sure what these added)
- 1 avocado, diced
- 1 hard-boiled egg, sliced (haven't used yet)
COCOA-Mexican Hot Chocolate

1.In a small saucepan, bring Silk to a simmer over medium heat
- 2 cups (500 ml) Silk Vanilla or Chocolate soy or almond beverage
- 3 oz (85 g) semisweet or bittersweet chocolate, finely chopped
- 1/2 tsp (2 ml) cinnamon
- 1/2 tsp (2 ml) vanilla
- Dash of cayenne, optional
