HG's Sweet 'n Sticky Sesame Chicken

Preheat oven to 375 degrees
- 10 oz. raw boneless skinless lean chicken breast, chopped into bite-sized pieces
- 1/8 tsp. salt
- 1/8 tsp. black pepper
- 1/4 cup fat-free liquid egg substitute (like Egg Beaters Original)
- 1/4 cup whole-wheat flour, divided
- 1/4 cup fat-free chicken broth
- 1 tbsp. cornstarch
- 2 tbsp. sugar-free pancake syrup
- 2 tbsp. seasoned rice vinegar
- 1 tbsp. ketchup
- 1/2 tbsp. lite/low-sodium soy sauce
- 1/2 tsp. sesame oil
- 1/2 tsp. crushed garlic
- 1 tsp. sesame seeds
- 2 tbsp. thinly sliced scallions
- Optional: crushed red pepper

- 12 servings
- 1 lb. split peas (yellow or green)
- 2 tablespoons EVOO or use half bacon fat if you have it
- 2 small onions, chopped
- 2 small carrots, peeled and chopped
- 2 celery rib, chopped
- 4 cloves garlic, crushed
- 2 leeks, chopped
- 2 tbsp. chopped flat-leaf parsley
- 1 tsp. chopped fresh thyme
- 2 bay leaves
- 10 cups chicken broth or broth from ham hock
- 2 cups shredded ham from ham hock
- salt and freshly ground pepper

- 4 slices white or whole wheat bread (something pretty soft so you can mold it), crusts removed or not
- (I used Dan's Wonder bread the first time, you might try something whole wheat for yourself and try leaving the crusts on for yours as well)

- 2 tbsp unsalted butter
- 2 leeks, cleaned and thinly sliced, white and light green
- 1 large onion, thinly sliced
- 1/2 cup diced garlic scapes (because it was on hand - not in calorie count)
- 1 jalapeno, seeded and thinly sliced
- 2 stalks celery, thinly sliced
- 1 tsp kosher salt
- 3 cloves garlic, chopped
- 5 sprigs fresh thyme
- 6 cups low sodium broth, vegetable or chicken
- 1 1/2 lbs. yellow potatoes, peeled and cut into 1-inch dice
- 1 1/2 lbs. cauliflower, separated into florets
- 1 large parmesan rind
- pinch cayenne pepper
- 1 1/2 cups 1% milk
- 1/4 cup heavy cream (I used 1/2 cup cream and no milk for consistency ... each batch would depend, I suppose)
- salt and freshly ground black pepper, to taste
- Crisp bacon, shredded cheese, drizzle of thinned yogurt, drizzle of truffle oil, finely chopped chives or green onions and croutons for topping

- 1 tbsp milk
- 2 tbsp chopped fresh dill

- TOPPING (For each serving of two portions):
- 4 slices bacon
- 1/2 small onion or equivalent amount of shallot, chopped
- 1 garlic clove, minced
- 1 tablespoon butter
- 2 tablespoons flour
- 2/3 cup chicken broth
- 2/3 cup milk
- 4 1-inch cream cheese, softened, and cut into 1-inch pieces
- 1 cup (90 grams) shredded cheese - Tex Mex or Habanero Blend
- 2 1 1/2 1/2 1/2 diced and 1/2 sliced
- 2 cups (5 oz.) cooked, shredded chicken breast (I used rotisserie)
- 6 ounces penne or bows, cooked and drained
- 3 tablespoons Panko
- 10 grams grated parm
- 20 grams shredded TexMex blend
- 1 tsp. EVOO
