FLAGEOLET - Gratinéed Flageolet (Slow Cooker)

Soak beans overnight or for several hours
- FOR THE BEANS:
- 8 oz. dried Flageolet
- 1 bay leaf
- pinch red pepper flakes
- a few cloves garlic, smashed
- two onions, chopped
- a few sprigs thyme
- 2 oz. diced pancetta or bacon
- parmesan rind
- 4 cups water
- 1/4 cup olive oil
- kosher salt to taste
- 1 cup finely diced carrots
- 3/4 cup finely diced celery
- fresh cracked pepper for serving
- 8 ounces poached or deli chicken, diced
- FOR THE BREADCRUMB TOPPING:
- 2 garlic cloves, peeled
- Small handful fresh thyme leaves (if the strands are soft, no need to strip the leaves)
- 3 - 4 leaves fresh sage, roughly torn
- zest of one lemon
- Kosher salt
- 2 cups fresh breadcrumbs (from 125 grams bread)(leave them on the large side)(I used a combination of Ace Bakery Rosemary, Onion & Cheddar and Olive)
- 30 grams grated parmigiano reggiano
- 3 tablespoons of olive oil
MACARONI*****Bacon, Lobster & Truffle Mac & Cheese

This was great for both, Dan loved it
- TOPPING:
- 1/2 tbsp. EVOO
- 1/2 cup panko
- 4 tablespoons (20 grams) finely shredded cheddar, gruyere or parmesan cheese
- small pinch of smoked paprika
- MAC & CHEESE:
- 3 oz. shredded white extra sharp cheddar cheese (don't even bother to try this with orange cheddar - the look of it is part of the appeal)
- 3 oz. shredded gruyere cheese
- 6 oz. dry penne or macaroni
- 1/2 tbsp. black or white truffle oil (don't leave this out - it makes the dish)
- 1 tsp. olive oil
- 3 slices uncooked bacon, finely chopped
- 2 tbsp. finely minced shallots
- 1 tbsp. minced garlic
- 1 tbsp. fresh thyme
- pinch of freshly grated nutmeg
- 1 1/2 tbsp.flour
- 10-12 tbsp. 2% milk
- 1 8-oz. lobster tail, in large dice
- sea salt and freshly ground black pepper
- 2 tbsp. minced fresh parsley, optional
CARROTS****Michael Symon's Roasted Carrots with Feta and Mint - 5 Points

Great for both, even without the feta, which I didn't bother with
- For the Dressing:
- 3/4 Lb Carrots (cut into 2-inch chunks at a bias)
- 1.5 tablespoons Extra Virgin Olive Oil
- Kosher Salt and Freshly Ground Black Pepper
- 1/2 tablespoon Toasted Whole Cumin Seeds (I didn't bother toasting them)
- 1/2 teaspoon Honey
- 1 tablespoon Vinegar of choice
- 1 tablespoon Extra Virgin Olive Oil
- 1/2 Orange (Zest and Juice)
- 2 tablespoons Mint
- 1/2 tables[pon Sherry Vinegar
- 1/2 tablespon Honey
- 1 Shallot (thinly sliced)
- 2 tablespoons Slivered Almonds, toasted
- Kosher Salt
- To Serve:
- 1/4 cup Feta (crumbled)
- 1/2 teaspoon Orange Zest
- Olive oil
Dressing - Sesame Ginger Vinaigrette for Asian Salad Jars

In small bowl, whisk together vinegar, soy sauce, peanut butter, ginger and sriracha
- 4 teaspoons rice vinegar
- 4 teaspoons soy sauce
- 1 tablespoon peanut butter
- 1 tablespoon grated fresh ginger
- 1 tablespoon sriracha
- 2 tablespoons extra virgin olive oil
- 2 tablespoons sesame oil

- 2 tablespoons olive oil (divided)
- 1/2 medium carrot (chopped 1/4-inch pieces)
- 1/2 medium onion (chopped into 1/2-inch dice)
- 1 stalk celery (chopped 1/4-inch slices)
- 1 tablespoon thyme leaves
- 1/2 cup white wine
- 1 cup Basic Tomato Sauce
- 1/2 cup chicken stock (or water)
- parsley (chopped for garnish)
- scallions (thinly sliced for garnish)
- hot sauce (to taste)
- kosher salt and freshly ground black pepper (to taste)
- Rub
- 1 1/2 tablespoons ancho chili powder
- 1/2 tablespoon fresh rosemary leaves (finely chopped)
- 1/2 tablespoon fresh thyme leaves (chopped)
- 1/2 tablespoon fresh oregano leaves (chopped)

- Honey-rosemary glaze:
- 2 large sweet potatoes, cubed 3/4" to 1" or 1-1 lb. package PC diced sweet potatoes, cut into smaller cubes
- 1 tablespoon EVOO

- 2 tsp fresh rosemary, chopped
- 1 tbsp olive oil
- 1 tbsp honey
- 1 tbsp red or white wine vinegar - I used Sherry
- 1 large garlic clove, grated
