POPCORN****Curried Coconut Popcorn (Actifry)

- 40 grams popcorn kernels, air popped
- 1 tbsp. virgin coconut oil
- 1/4 tsp finely ground sea salt, plus more to taste
- 1 tbsp. honey
- 1 tbsp. unsalted butter
- 1/4 tsp curry powder
- 2 tablespoons chopped fresh cilantro (don't bother with this, it added nothing)
RUM - The True Canadian

Fill rocks glass with ice
- 1 1/2 oz. Dillon’s The White Rye or Appleton's Spice Rum (my substitution)
- 4 dashes Dillon’s DSB Bitters
- 1 tsp. maple syrup (medium colour is recommended)
- 3 oz. fresh pressed apple cider
CORN****Chili Lime Skillet Corn

Easter 2014 - This was very good and easy enough to throw together even on a week night
- 1 tablespoon EVOO
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1 pinch cayenne pepper
- 1 1/2 cups whole kernel corn; canned or frozen, rinsed and well drained
- 2 tbsp. chopped fresh cilantro
- 1 tablespoon lime juice
- 1/4 cup finely chopped red bell pepper
- 2 tbsp. finely minced fresh jalapeno, if you have it - be sure to add this - one whole jalapeño
YONANAS - Watermelon Blueberry Sorbet (wout/Bananas)

- 1/4 C frozen blueberries.

MUSHROOM****Tuscan Mushroom, Tomato and Egg Soup - Acquacotta - Slow Cooker

Very good for both
- 1 tbsp. EVOO
- 1 small onion, chopped
- 2 cloves garlic, thinly sliced
- 1 pinch of red pepper flakes
- 1 lb. assorted mushrooms - portobello, white, cremini, shiitake, trimmed and sliced or chunked
- 3 sprigs of thyme + 1 sprig rosemary + 2 small bay leaves
- 1 14-oz. can fire-roasted tomatoes
- 6 cups beef, mushroom or chicken broth
- salt to taste
- 3 large eggs
- 6 oz. Mini cheese ravioli from Regency Bakery or, most recently, 150 grams PC Italian Sausage Cappelletti (Recipe originally called for slices of toasted peasant bread, which I'm not sure would fly with Dan. I'd like that though)
- drizzle of olive oil (Dan) or chili oil (me), to serve
- grated pecorino romano or parmigiano reggiano, to serve
- handful of baby spinach + some torn basil for me, if you have it, to serve

- 1 lb ground turkey, chicken or beef (or whatever you prefer~~lamb, veal, combo)
- 1 tbspJamaican Jerk seasoning mix
- 1 tsp sea salt
- 1/2 tsp red chili flakes
- 1/2 tsp coarse ground pepper
- 1/4 cup basil pesto (store bought), optional
- 1/4 cup Greek plain yogurt
- 1 beaten egg
- 12-15 large kale leaves (washed and dried and stems removed)
- 1/2 cup grated Parmesan reggiano plus more for garnish/serving
- 1/2 cup Italian bread crumbs
- 1 can diced Italian tomatoes
- 2 cups pasta sauce (store bought~~good brand~~marinara or your choice)
- 1 box pasta (your choice)~~I used papparedelle.

- 1/3 cup shredded fresh basil, optional

- 1 clove garlic, thinly sliced
- 3 slices microwave bacon, diced
- pinch of red pepper flakes
- salt and pepper to taste
- 1/2 head kale, stems removed and thinly sliced (I had black kale the first time)
- 1 can PC Blue Menu cannellini beans, rinsed and drained
- 1/4 - 1/2 cup chicken broth
- squeeze of lemon juice, to serve
BLACK-EYED****Stewed Black-Eyed Peas with Country Ham - 3 Points

- 8 Servings
- 1 tbsp. EVOO
- 1/2 cup finely minced onion
- 1/2 cup chopped celery
- 1 carrot, diced
- 1/2 cup chopped red bell pepper
- 1 leek, halved and chopped
- 1 tbsp. minced garlic
- 1 bay leaf
- 1 sprig fresh thyme
- 7 - 8 ounces chopped ham from smoked pork hock
- 8 ounces dried black-eyed peas, soaked in cold water overnight and rinsed well
- 2 1/2 cups liquid from boiling ham hock
- Salt and freshly ground black pepper
- hot sauce to taste
VINAIGRETTE - Chipotle Sherry Vinaigrette

- 3 tbsp sherry vinegar
- 1 tbsp fresh lime juice
- 1 tbsp minced shallots
- 1 tbsp chopped cilantro
- up to 2 tbsp chipotle puree (taste as you go, 1 teaspoon at a time)
