POLENTA-Polenta with Mushroom Ragu, Arugula, Poached Egg & Garlic Breadcrumbs

1. *TO MAKE THE RAGU*: Heat the oil in a large pan on medium-low
- POLENTA:
- 1/3 cup instant white or yellow polenta
- pinch of salt
- 1 1/3 cups chicken, vegetable or mushroom broth
- 1 tablespoon softened mascarpone or butter
- 1 tablespoon grated parmigiano reggiano
- pinch of freshly grated nutmeg
- salt and pepper to taste
- RAGU:
- 2 cups fresh mushrooms (cremini, oyster, shitaake), sliced thinly
- 4 cloves garlic, minced
- 2 shallots, sliced thinly
- 1 sprig fresh rosemary
- 2 sprigs fresh thyme
- 1 tablespoon olive oil
- 1/4 cup vegetable or chicken broth
- TO SERVE:
- 4 tablespoons panko
- 2 eggs
- 1 teaspoon white vinegar
- handful of arugula
- freshly grated or shaved parmigiano reggiano
- drizzle of best extra virgin olive oil
Chicken - BBQ-Ranch Chicken Mason Jar Salad

Divide all ingredients between two mason jars, in order listed
- 5 tablespoons Buttermilk Herb dressing OR
- 4 tablespoons Yogurt Dressing - Mediterranean Fresh
- 20 cherry tomatoes, halved
- 2 baby cucumbers, sliced
- 1/4 avocado, peeled and chopped
- 4 tablespoons canned black beans
- 4 tablespoons frozen corn, thawed
- 2 slices red onion, chopped
- 4 ounces chopped poached chicken
- 1 - 2 tablespoons barbecue sauce of choice
- 4 cups chopped romaine

BASMATI****Turmeric Coconut Lemon Rice

09/06/17 - VVG. I was lazy and didn't bother with the onion, garlic and ginger and it was still very good
- 1/2 tbsp olive oil
- 1/4 small onion, diced
- 1 clove garlic, minced
- 1 tsp fresh grated ginger
- 1/4 tsp salt
- 6 tablespoons white basmati rice, rinsed and drained
- 1/2 tsp ground turmeric or 1 1/2 tsp. grated fresh
- 5 tablespoons lite coconut milk
- 1/2 cup water or broth (amount necessary to bring up to 1/2 cup cooking line in rice cooker)
- 1/2 small lemon, bottom cut flat and seeds removed
- Chopped fresh basil and cilantro leaves, for serving (Optional for me only)
- 4 ounces shredded deli chicken, optional
TOMATO****Simple Spiced Marinated Tomatoes

- 2 cups halved red, yellow, or orange cherry tomatoes
- 2 thinly sliced green onions
- 2 garlic cloves, minced
- 1/2 jalapeño pepper, thinly sliced
- 2 1/2 tablespoons white balsamic vinegar (I used half regular white balsamic and half white balsamic glaze I have kicking around)
- 1/2 tablespoon light brown sugar
- 1 tablespoon extra virgin olive oil
- 1 teaspoon minced peeled fresh ginger
- 1/2 teaspoon ground cumin
- salt and freshly ground black pepper to taste
FREEKEH****Freekeh, Chickpea and Herb Salad

- 1/3 cup (70 grams) freekeh
- pinch of kosher salt
- 3 tablespoons chopped fresh flat-leaf parsley
- 2 tablespoons chopped fresh dill or mint
- 1/3 cup thinly sliced celery, plus 1 tablespoon chopped leaves
- 3 scallions, finely chopped
- 1 cup chickpeas, drained and rinsed, roughly chopped, if desired
- 4 teaspoons fresh lemon juice, more to taste
- 1/4 teaspoon ground cumin, more to taste
- 1/4 teaspoon chili powder, more to taste
- 1 garlic clove, grated
- 2 tablespoons best extra-virgin olive oil
BASMATI****Cilantro Lime Rice

- 1 teaspoon sesame oil (if serving with Asian) or olive or avocado oil (if serving with Mexican)
- pinch of salt and freshly ground pepper to taste
- 1/2 rice-cooker cup (6 tablespoons) basmati or jasmine rice
- juice and zest of 1 lime
- required amount of chicken broth
- 1/8 teaspoon ground cumin
- 2 Tablespoons finely chopped cilantro

- 1/2 teaspoon ground cumin
- 2 cans (about 15 ounces each) black beans, drained and rinsed
- 4 cups chicken broth
- 1/2 cup lightly packed fresh cilantro leaves, plus more for serving
- 1/4 cup sliced almonds, toasted, plus more for serving
- Sliced avocado, for serving
- Plain Greek yogurt or sour cream, or chipotle crema, for serving
