TUNA****Tuna Noodle Casserole

26/04/14 - This was good, as a change of pace
- 4 ounces medium egg noodles
- 1/2 medium onion, finely chopped
- 1 stalk celery, finely chopped
- 1 clove garlic, minced
- 8 ounces button mushrooms, quartered
- 2 tbsp. all-purpose flour
- 1 cup milk
- salt and pepper to taste
- 1 teaspoon Knoor chicken bouillon
- 1-6 ounce can tuna in water, drained and
- flaked
- 1/2 cup frozen peas, thawed
- 2 tbsp. chopped fresh dill
- 1/4 cup panko
- 1 tablespoon EVOO
- 2 tablespoons grated parmesan cheese
- 1/2 cup Kraft 4-Cheese Italiano Light blend
Prosciutto-Parmesan Stock

1. Combine ingredients, bring to a boil, simmer for 5 to 15 minutes, then strain
- 4 ounces sliced prosciutto (or some prosciutto rinds or ends)
- 3 pieces Parmesan rind
- 2 crushed garlic cloves
- A rosemary sprig
- 6 cups water
BRINE*****Favorite poultry brine

* *Heat* water in microwave in a large measuring cup
- Optional:
- 3/4 cups water
- 3/4 cup chicken broth
- 2 tbsp. coarse salt
- 2 tbsp. turbinado sugar
- 2 cloves garlic, smashed
- 1 piece each of fennel, onion and celery, coarsely chopped
- 5 - 6 peppercorns
- 1 handful of fresh herbs, bruised - thyme, parsley, rosemary, oregano, sage, etc.
- 1 bay leaf, bruised
- allspice or juniper berries, whole cumin or coriander, anise, pinch of hot pepper flakes, chopped jalapeno pepper, etc., depending on recipe to be used to cook bird.
- This is enough for a small chicken or cornish hen or guinea fowl.
EGG - Udon Noodle Soup with Fresh Spinach & Egg

08/10/16 - Good basic soup, but nothing spectacular
- 1 1/2 cups chicken broth or homemade Asian broth
- 3/4 tablespoon minced ginger (about 1/2” cube)
- 3/4 tablespoon minced garlic (about 1-2 large cloves)
- 1 shallot, peeled and diced
- 1/2 tablespoon soy sauce
- 1 teaspoon mirin
- 1 small carrot, peeled and sliced thin on the diagonal
- 1 package fresh udon noodles
- 2 ounces cooked chicken or turkey, shredded, optional
- 2 ounces baby spinach leaves
- 1 large egg
- 1 scallion, chopped
- shichimi togarashi, to garnish
FRIED****Yangzhou Fried Rice with Shrimp

Good basic recipe, method is easy and quick once rice is cooked, with tweaks noted
- 3/4 cup brown basmati rice
- 4 oz. cooked shrimp or chinese pork or leftover poultry (the shrimp is just okay)
- 1 cup frozen peas
- 1 tbsp. EVOO
- 6 green onions, finely chopped
- 1 tablespoon finely shredded or chopped fresh ginger + some garlic (not used first time)
- 1 egg, lightly beaten
- 1 1/2 tbsp. chicken broth
- 1 tbsp. sake
- 2 tsp. light soy sauce - double this
- 1/2 tsp. salt, or to taste
- 1/2 tsp. sesame oil - double this
- 1/4 tsp. freshly ground black pepper (DON'T add five spice powder - that's a mistake)

- 1 slice bacon, finely chopped
- 1 clove garlic, finely chopped
- 2 tablespoons finely chopped onion
- 1 can (14.5 oz each) Hunt's® Diced Tomatoes with Basil, Garlic & Oregano, drained
- 1/8 teaspoon ground black pepper
- 1/2 pound large (21/30 count) raw shell on with tail shrimp, thawed if frozen
- 2 tablespoons crumbled feta cheese
- 1/4 teaspoon dried dill weed
RYVITA - Ryvita with Skinny Peanut Butter & Yogurt Dip and Apple

- 3 slices Ryvita of choice
- 1 serving of Skinny Peanut Butter & Yogurt Dip
- 1 medium apple, thinly sliced

- 6 large apples, cored and finely chopped to equal 6 cups (honeycrisp, gala, ambrosia) I used 5/6 Granny Smith and 1/6 Gala, both organic
- 1/3 cup raw sugar
- 1/2 cup light brown sugar, not packed or 1/4 cup Splenda Brown
- 1 tsp ground cinnamon
- 1/8 tsp allspice
- 1/8 tsp nutmeg
- 1/2 tsp sea salt
YONANAS - Mixed Berry (w/Banana)

- 2 frozen bananas, halved
- 3/4 cup (105 grams) 4 Berry Blend
