Always welcome, lunch or dinner
- 3 large slices PC À L’Européenne Multigrain Rye Bread or marble rye bread, halved
- 6 tablespoons spreadable goat cheese or light cream cheese
- lemon pepper, to taste
- thinly sliced shallots
- 1 pkg. Costco smoked salmon, torn into small pieces (2 oz.)
- finely chopped fresh dill
- 2 tablespoons capers, rinsed
- freshly ground pepper and Maldon salt to taste

- 250 PC mild or hot chorizo, sliced thinly on the diagonal (1 package)
- 2 tablespoons extra-virgin olive oil
- 1 medium onion, diced
- 4 garlic cloves, minced
- 1 large carrot, diced
- 12 - 16 ounces waxy potatoes, like Yukon Gold peeled, OR sweet potatoes, diced in 1/2" cubes
- 1/2 cup navy, cannellini or flageolet beans, soaked overnight and drained
- 1 15-oz can fire-roasted diced tomatoes
- 1 litre chicken broth
- 2 fresh or dried bay leaves
- 1 large sprig fresh thyme
- 1 sprig rosemary
- 1/2 - 1 teaspoon smoked Spanish paprika (depending on how smoky the chorizo tastes already)
- 1 parmesan rind, removed before serving
- 6 cups kale, ribs removed, coarsely chopped (1 small head)
- Coarse salt to taste
- Freshly-ground black pepper to taste
- 2 tbsp. red-wine vinegar or garlic red-wine vinegar

- INGREDIENTS:

- 1/4 tsp. sea salt
- 2 cups milk

- 2 cups small, thin bite-size slices of (crisp green unripe) mango
- 4-6 Thai chillies, cut into thin rounds
- 1/2 – 1 tsp. sea salt
- 2-3 tsp. granulated sugar
- 2 Tbs. freshly squeezed lime juice (about 1/2 to 1 lime)

- 3/4 pound chicken breasts, cut into strips
- 1/2 cup canned coconut milk
- 3 tablespoons chunky peanut butter
- 1-2 cloves garlic, minced
- 1 1/2 teaspoons minced fresh ginger
- 1 small jalapeno, minced
- 2 teaspoons palm sugar
- 1 1/2 tablespoons soy sauce
- 1 tablespoon lime juice + grated zest
- 1 tablespoon rice wine vinegar
- 2 teaspoons fish sauce
- 2 teaspoons Thai red curry paste
- 1 teaspoon sesame oil
- 1/4 to 1/2 teaspoon crushed red pepper flakes (taste after adding curry paste and jalapeno)
- 1 tablespoon cornstarch
- 2 tablespoons coconut milk
- 1 ounce chopped peanuts or cashews, for garnish
- 3 tablespoons cilantro, chopped, for garnish
- 2 scallions, thinly sliced, for garnish
- lime wedges and thinly sliced fresh chili, for garnish
- Rice, fresh udon noodles, rice noodles, or lettuce leaves, for serving
Easy Kimchi

Prep all vegetables as directed and place in large bowl
- ADDITIONAL OPTIONAL INGREDIENTS TO TRY:
- 1 head napa cabbage, cored and shredded (makes about 8 cups)
- 6 green onions, chopped
- 2 carrots, grated
- 1 medium daikon radish, grated
- 10 red radishes, grated
- 5 garlic cloves, pressed
- 3 Tbsp grated ginger
- 2 Tbsp sea salt (reduce to 1 1/2 tbsp. I used two heaping tablespoons fine sea salt and it's on the salty side)
- 1 to 1 1/2 Tbsp gochugaru (scant)(Korean red chili powder)
- 1 leek, thoroughly soaked to remove debris and sliced
- 1 red or yellow bell pepper, sliced or chopped into 1/2 inch squares

- water
- 1 tbsp. Becel buttery taste
- 1 tsp. sugar
