- 1 teaspoon olive or coconut oil
- 2 teaspoons homemade Teriyaki Sauce
- 1 green onion, shredded, optional
- 1/2 teaspoon sesame seeds
THIGHS****Rusty Chicken Thighs

- 1 clove garlic, sliced, or more to taste
- 1 teaspoon Asian chile pepper sauce (such as sambal oelek), or more to taste -I used Sriracha
- 1 tablespoon maple syrup
- 1 tablespoon soy sauce
- 1 tablespoon mayonnaise
- 1 1/2 tablespoons rice vinegar
- salt and freshly ground black pepper to taste
- 8 oz. skinless, boneless chicken thighs
- 1 lime, cut into wedges, for serving (Optional)
CHEESE****Savoury Phyllo Tartlets

25/12/14 - topped half with smoked salmon and half with red and black caviar, sprig of dill on all
- FILLINGS:
- 8 sheets phyllo
- 100 grams unsalted butter, melted
- Whipped cream cheese + grated zest of 1 lemon or lime, depending on topping chosen + thin strips of smoked salmon + fronds of fresh dill + small dollops of caviar
- OR
- Whipped cream cheese + dollop of jalapeno or other hot pepper jelly
- OR
- Salmon Rilletes + a dab of creme fraiche + sprig of dill
- OR
- Spinach or other prepared dip
- OR
- Pieces of camembert or brie + fig jam or bacon jam or jelly of choice (hot pepper, blackberry, etc.)
- OR
- Pieces of camembert or brie + half a pecan + pinch of smoked Maldon salt then baked and drizzled with honey once done
- OR
- Pieces of camembert or brie + 1/2 teaspoon fig jam + chopped walnuts. Bake until the cheese is bubbling, about 10 minutes and top with pomegranate seeds.
FRIED****Fried Rice (Actifry)

- 1 tablespoon olive or canola oil
- 1 teaspoon sesame oil, divided
- 1/3 cup mixed colour peppers, in small dice (don't add jalapeno, it's too much with the sambal and my chilies for garnish)
- 1 shallot, thinly sliced
- 2 cups leftover cooked basmati or jasmine rice
- 1 clove garlic, minced
- 1 " piece fresh ginger, finely chopped
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1 scant teaspoon sambal oelek
- 2 eggs, beaten
- 2 - 3 ounces leftover cooked chicken (I used leftover pork stick from the Actifry the first time, which i found overly hard)
- 4 ounces small cooked shrimp, cut in half if necessary
- 1/2 cup frozen peas, thawed
- 2 scallions, thinly sliced on the diagonal
- SAUCE:*
- 1 teaspoon sesame oil
- 2 teaspoons kecap manis
- 2 teaspoons dark soy sauce
- 2 teaspoons light soy sauce
- 1 teaspoon rice vinegar
SQUASH - Roasted Pumpkin Soup

Preheat oven to 400ºF. Line 2 baking sheets with tin foil
- tablespoon curry powder OR:
- 2 tablespoons olive oil
- 1 sugar pumpkins, stem removed, cut in half, seeds removed, about 3 pounds
- 2 medium carrots, peeled and cut into quarters
- 1 granny smith apple, cut in half and cored
- 1/2 yellow onion, peeled, cut in quarters
- 1/2 teaspoon nutmeg (freshly grated)
- 4 cups chicken stock
- 1/4 cup plain Greek yogurt
- 1/4 cup cilantro (optional)
- 1/4 cup pumpkin seeds, toasted
- kosher salt and freshly ground black pepper (to taste)
OYSTERS*****Oysters Rockefeller - my version - 1 Point per Oyster

31/12/13 - Dan no longer likes the spinach - see if there's an alternative
- 12 oysters on the half shell
- 4 tbsp. panko
- 2 - 4 tbsp. finely grated parmigiano reggiano
- 1 tsp. EVOO
- 1 ounce finely diced pancetta or chopped bacon
- 1 small shallot, minced
- 2 tbsp. minced fennel
- 1 tbsp. parsley
- 1/2 cup fresh spinach, finely chopped
- 1 tbsp. zambucca or cognac
- 1 - 2 tbsp. whipping cream - 35% or creme fraiche
- pinch each cayenne and freshly grated nutmeg
- salt and freshly cracked black pepper to taste
SAUSAGE****Wisconsin Beer Brats

- 1 pkg. Bratwurst
- 1 can beer
- 1 onion, sliced
- 1/8 tsp. cayenne pepper or a few shakes of tabasco - depending on spiciness of sausage
- 2 cloves garlic, minced
- 2 tsp. brown sugar or honey
Laura Calder's Halibut Poached in Olive Oil

Heat the oven to 250°F/120°C
- 2 * 2 skinned filets of halibut (1/4 pound/125 g each)
- 1 1/2 * 1 1/2 cups olive oil (not extra virgin)
- * Zest of one orange
- 1/2 * 1/2 teaspoon fennel seed
- 2 * 2 sprigs thyme
- 1 * 1 clove garlic
- * Freshly ground black pepper
- * Fleur de sel, for garnish
Weekend Roti

Weekend Roti 1. Put cauliflower, cilantro, ginger, chili, coriander powder and salt into a bowl and mix well
- 1 cup grated cauliflower
- 1/4 cup chopped cilantro
- 1 tablespoon chopped ginger
- 1 small green chili, seeds removed
- pinch coriander powder
- salt and pepper
- 1 recipe Roti dough (to follow)
- flax seed oil for brushing
- 2 cups whole wheat flour
- 3/4 cup to 1 cup water
FISH****Fish Tacos with Lime-Cilantro Crema

- Crema:
- 4 Servings
- 2 tbsp. thinly sliced green onions
- 2 tbsp. chopped fresh cilantro
- 2 tablespoons fat-free mayonnaise
- 2 tablespoons fat-free greek yogurt
- 1/2 teaspoon grated lime rind
- 1 teaspoon fresh lime juice
- 1/4 - 1/2 tsp. Chipotle Tabasco (taste as you add it)
- 1 garlic clove, minced
- Salt to taste
- Tacos:
- salt and pepper
- 6 oz. red snapper, tilapia or basa fillets
- Cooking spray
- 4 (6-inch) corn tortillas
- 1 cup shredded romaine or cabbage
- 1/2 medium ripe avocado, sliced
