BEAN****Black Bean, Chorizo and Kale Soup (HF/HP)

VVG for both and bonus easy to make
- 1 link PC mild chorizo sausage (250), diced
- 1 large onion, chopped
- 1 jalapeno, minced or thinly sliced
- 3 cloves garlic, thinly sliced
- 1/2 teaspoon (scant) crushed red pepper flakes
- 1 tablespoon olive oil
- 1 package PC Organic Baby Kale (5 ounces)
- 1 can Eden or Yves Organic Black beans, rinsed (398 ml)
- 1 can La Costena Refried Black Beans (546 ml)
- 1 can consome + water as required (I added one full can which was perfect)
- salt and pepper to taste
- crumbled feta, lime wedges, chopped fresh cilantro, chipotle-lime crema and tortilla strips (all optional - to serve)
TUNA*****Sesame Tuna Steak with Frizzled Scallions and Ginger

We both like this very much
- SAUCE:
- 5 - 6 ounces tuna steak
- 1 tbsp. soy sauce
- 1 tbsp. mirin
- 1/4 tsp. sesame oil
- 1 pinch wasabi powder or paste - CAREFUL!
- 1 clove garlic, grated
- 2 tsp. mixed black and white sesame seeds
- FRIZZLED SCALLIONS AND GINGER:
- 2 tbsp. EVOO (2 tsp. accounted for, majority discarded)
- 3 green onions, cut lengthwise into narrow strips about 2" long (don't even consider replacing this with a leek - I've done it, I know - it doesn't crisp)
- 1 2" long piece of fresh ginger, peeled and cut into fine matchsticks
ARTICHOKE****Stuffed Artichokes with Crab

- 2 large artichokes
- Salt
- For the Stuffing
- 2 tbsp. extra-virgin olive oil
- 1 clove garlic, thinly sliced
- 1/4 tsp crushed red pepper flakes
- 2/3 cup dried bread crumbs or panko
- 1/3 cup freshly grated Parmesan cheese
- Leaves from 1 sprig fresh basil, chopped - didn't use
- Leaves from 1 sprig fresh thyme - didn't use
- 1 can lump crab meat, drained
- Freshly ground black pepper
- 1/4 cup Basic Sauce Ravigote
- 1 green onion
SMOOTHIE-Salted Peanut Butter Cup Smoothie

Blend until smooth. To serve, sprinkle with a pinch of salt
- 1 cup (250 ml) any Silk Vanilla soy or almond beverage
- 1/2 frozen banana
- 1 Tbsp (15 ml) cocoa powder
- 1 Tbsp (15 ml) peanut butter
- 1/2 cup (125 ml) ice flaked sea salt, for sprinkling
- 2 Tbsp (30 ml) protein powder and/or 1 Tbsp (15 ml) ground flax, if desired

- 4 teaspoons Becel or room temperature butter
- 4 slices rustic white bread (something with some texture to stand up to the filling, like a sourdough rye. Nutrition is calculated using PC À L’Européenne Multigrain Rye Bread)
