RICE****Jeweled Golden Rice

* Combine rice, broth, water, curry powder, turmeric and saffron in a medium saucepan
- 1/4 cup Lundberg wild and brown rice blend
- 1/2 cup chicken broth
- 1/2 tsp. mild or hot curry powder - be very judicious with this, consider the audience
- 1/8 tsp. ground turmeric
- 1 generous pinch finely crumbled saffron threads
- 1 tbsp. extra virgin olive oil
- 1 1/2 tbsp. lemon juice
- 1 tbsp. honey
- 1 tsp. orange zest
- 1 tsp. minced ginger
- 1/2 cup chopped celery
- 1/2 oz. coarsely chopped dried cherries or cranberries
- 2 chopped scallions or chives, divided
- 1/2 cup grapes, halved
- 1/2 oz. unsalted mixed nuts, pecans, almonds and cashews, chopped, divided

- 1/4 cup sun-dried tomato vinaigrette
- 3 tablespoons sliced red onion
- 2 tablespoons sliced sun-dried tomatoes
- 2 teaspoons minced garlic
- 2 - 3 tablespoons fresh basil chiffonade
- 10 - 12 shrimp, cooked and cooled - for Dan
- 1 can tuna in olive oil, drained - for me

MUSHROOMS****Grilled Portobello Mushrooms with Thyme and Garlic

* Marinate mushrooms at room temperature in a zip-loc bag for a few hours
- 1 tbsp. chicken broth
- 1/2 tbsp. EVOO
- 1/2 tbsp. balsamic
- 1 - 2 cloves garlic, minced
- 1 tsp. each finely chopped fresh thyme and rosemary
- salt and pepper to taste
- 2 large portobello mushroom caps, wiped clean

- 1 tablespoon garlic flavoured extra virgin olive oil
- salt and pepper
- 2 tablespoons freshly grated parmigiano reggiano, to serve
- Dipping sauce of choice (not in calorie count) - Pizza sauce, Marinara sauce or some kind of garlic aioli sauce

- 1 1/2 tablespoons low-sodium soy sauce
- 1 tablespoon toasted sesame oil
- 1/2 teaspoon chili paste or minced fresh red chili
- 1 1/2 tablespoons freshly squeezed lime juice
- 1/2 tablespoon each grated ginger
- 3 cloves minced (or thinly sliced) garlic
- 1 pound bitter greens, such as rapini, collard, mustard, baby bok choy, or dandelion, washed, trimmed, and torn into pieces
- 1 teaspoon sesame seeds, lightly toasted
- 1/4 teaspoon crushed red-pepper flakes
- 3 cloves garlic, thinly sliced
- FOR SALAD:
- 4-6 cups baby spinach
- 1 tablespoon Asian vinaigrette
- 1 teaspoon sesame seeds
Grilled Portobello “Steak” Sandwiches with Blue Cheese Sauce

Preheat a grill to medium-high
- Blue Cheese Sauce, (recipe follows)
- 3 teaspoons walnut oil, or extra-virgin olive oil, divided
- 4 slices whole-wheat country bread
- 2 vine-ripened tomatoes, cut into 1/2-inch-thick slices
- 4 portobello mushroom caps, 3-4 inches in diameter
- 1 sweet onion, such as Vidalia, cut into 1/2-inch-thick slices
- Salt & freshly ground pepper, to taste
- 2 cups trimmed arugula, or watercress
- 2 tablespoons chopped walnuts
