- Serves 2
- 2 ounces turkey kielbasa
- 2 3/4 ounces green lentils - Inari Organic
- 1 shallot, minced
- 1 tbsp. EVOO
- 1 clove garlic, minced
- 2 cups chicken broth
- 1/2 tsp. Tuscan herb blend or fresh herbs of choice
- 1 tbsp. chopped fresh coriander or parsley (OPTIONAL)
- 3 ounces baby spinach
- 5 ounces Yukon Gold or red-skinned potatoes, peeled and grated
- Kosher salt and freshly ground black pepper, to taste
- 1 section chopped rind of preserved lemons
Turkey-Jasmine Rice Meatballs with Baby Bok Choy

Use a box grater to shred the ginger after you've peeled away the brown outer layer
- Meatballs:
- 1 cup water
- 1/3 cup uncooked jasmine rice
- 1/4 cup dry breadcrumbs
- 1/4 cup chopped green onions
- 3/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 1/4 pounds ground turkey
- 2 large egg whites
- 1 garlic clove, minced
- Cooking spray
- Bok choy:
- 6 baby bok choy (about 1 1/3 pounds)
- 2 teaspoons vegetable oil
- 1/4 cup chopped green onions
- 1 tablespoon shredded peeled fresh ginger
- 1 garlic clove, minced
- 1 cup water
- 3/4 cup fat-free, less-sodium chicken broth
- 3 tablespoons low-sodium soy sauce
- 1 1/2 teaspoons sugar
- 1/2 teaspoon crushed red pepper
- 1 1/2 tablespoons dry sherry
- 2 teaspoons cornstarch

- chicken broth
- 1 tbsp. EVOO
- 1 shallot and 1 clove garlic, minced or thinly sliced
- 2 tbsp. pine nuts
- 1/2 lemon
- 2 tbsp. minced fresh dill
- 2 tbsp. minced fresh parsley
- 1 tsp. minced fresh mint, Optional
- 3 ounces shredded poached chicken, optional
- 45 grams crumbled feta cheese
GARBANZO*****Slow-Cooked Chickpeas with Orange Zest and Lemon Juice - 5 Points

* *Saute* onions, sweet pepper, celery and garlic in olive oil until soft
- 4 servings
- 1 tbsp. evoo
- 1 medium onion, halved and thinly sliced
- 1 clove garlic
- 1/4 sweet red pepper, thinly sliced
- 1/3 cup coarsely chopped celery, including leaves, if available
- 5 1/2 oz. dried garbanzos, soaked overnight
- big pinch of Aleppo pepper
- 1 1/2 cups chicken broth
- 1 - 2 " strip of orange zest or grated zest of one orange
- 1 bay leaf
- 2 tbsp. dry white wine
- 2 tbsp. chopped fresh parsley
- sage and thyme bouquet garni
- 1 scant tbsp. dijon
- 1 - 2 tbsp. fresh lemon juice
- salt and pepper to taste
CRUST****Rustic Crust Organic Old World Flatbread Pizza Kit (Costco)

- Brush crust lightly with olive oil or garlic flavoured oil and spread with pizza sauce.
- Heat oven to 450.
- Top pizza as desired and place directly on rack in pre-heated oven. Immediately reduce heat to 425 and cook for 8 to 12 minutes until golden brown.
