CHICKEN****Buffalo Chicken Salad

- 4 ounces boneless, skinless chicken breast, poached and shredded or cubed (or deli chicken) tossed with 1 tablespoon Frank's buffalo hot sauce OR
- 1/2 to 1 recipe Boneless Buffalo Chicken bites
- 3 stalks celery, sliced 1/8 inch thick on a bias
- 2 diagonally sliced scallions
- 1 jalapeno (thinly sliced into rings, seeds shaken out)
- 5 - 6 cups shredded romaine (1 head)
- Maldon salt and freshly ground black pepper
- 4 tablespoons Creamy Buttermilk & Blue Cheese Dressing
- 1/4 cup Crispy Polenta Croutons OR handful of homemade croutons
- 2 tablespoons crumbled blue cheese
STEAK****Steak and Mushroom Pot Pies

24/12/15 - VG for both. Bit of work when you initially make them, but it makes 3 freezer portions as well
- FOR TOPPING:
- 1 lb. steak of choice, diced into bite-sized pieces (It called for "braising steak" but I used a rib-eye from Tarini's)
- 4 tbsp flour
- 12 slices smoked bacon, chopped
- 2 cups hot beef stock or consome (1 can + water)
- 1 cup red wine
- 4 tbsp dried wild mushrooms, soaked 1 cup boiling water
- (reserving the mushroom 'stock')
- 6 banana shallots, roughly chopped - I used a large white onion but either would work
- 3 garlic cloves, finely chopped
- 16 oz mixed or button mushrooms, diced
- 3 tbsp tomato paste
- Dash Worcestershire sauce
- 4 fresh thyme sprigs
- 2 tbsp flat leaf parsley, finely chopped
- Olive oil, as needed, to fry
- Salt and pepper to season
- ___________
- 1 egg yolk beaten with 1 tbsp milk to glaze

MUSHROOM*****Savory Mushroom Stroganoff

- 2 1/2 ounces pancetta, diced
- 12 oz. portobello mushrooms or cremini Mushrooms
- 2 shallots, roughly diced or 4 - 6 green onions
- 1 medium leek, thinly sliced
- sprigs of fresh thyme and sage
- 1 clove garlic, minced
- 1 tbsp. EVOO
- 1 tbsp. butter
- 1 1/2 tbsp. flour
- 1/2 tsp. smoked paprika
- 1 can consome
- 1/4 cup Madeira or Marsala
- 1/4 cup water, if needed
- 1 tbsp. tomato paste
- 1/4 cup greek yogurt
- 60 grams soft goat cheese
- 2 tbsp. flat-leaf parsley, chopped (OPTIONAL)
- 1 dash Worcestershire sauce
- salt and freshly ground black pepper
EGG****Provencal Tomato Soup with Poached Egg

- 2 cans fire-roasted tomatoes
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp. EVOO
- 4 strips orange zest
- pinch of saffron
- bouquet garni with bay leaf, rosemary, thyme
- 1 pinch fennel pollen
- 1 small pinch sugar
- pinch of cayenne
- salt and pepper to taste
- 2 tablespoons fresh basil chiffonade
- 4 teaspoons (5 g. each) freshly grated parmigiano reggiano
- 4 eggs
RISOTTO****Shrimp and Celery Risotto

- 1 1/2 cups chicken broth
- 6 oz. cooked shrimp, cut into 1/2" pieces
- 2 medium shallots, finely minced
- 1 tablespoon EVOO
- 1/4 cup finely chopped celery
- 1 garlic clove, finely chopped
- 1 tablespoon finely chopped fresh Italian parsley
- 1/2 cup Arborio rice
- 1/4 cup dry white wine
- salt and freshly ground black pepper to taste
- 2 tablespoon unsalted butter or EVOO
- 30 grams grated fresh parmigiano reggiano
- lemon wedges, to garnish, if desired

- 1 tsp. ground cumin
- 1 tsp. ground coriander
- good pinch of salt

- 1 1/2 cups Greek style plain yogurt
- 1/3 seedless cucumber, peeled and chopped
- 3 tablespoons fresh dill
- 1/2 lemon, juiced
- 1 1/2 teaspoons cumin
- 1 1/2 teaspoons coriander

- 1/4 cup stone-ground cornmeal
- 1 pinch sea salt
- 4 oz. baby spinach
- 1 shallot, finely minced
- 1 clove garlic, minced
- 1 tsp. EVOO
- 4 tablespoons mascarpone cheese (50 grams)
- pinch freshly grated nutmeg
- 3 tablespoons freshly grated parmigiano reggiano or pecorino romano cheese (5 grams)
- (Can replace spinach with 1/2 cup chopped cooked broccoli, swiss chard, zucchini or winter squash)

14/04/15-I made this just for myself - quick, easy and tasty
- 4 oz. haddock, halibut, cod, tilapia (I used 1 haddock filet from Costco)
- 1 tsp. finely minced ginger
- 3/4 tbsp. Soy sauce or Ponzu
- 1/2 tsp. Sesame oil
- juice of 1 key lime or 1/2 regular lime
- 1 thinly sliced fresh chili
- 1 sliced green onion
- 2 tablespoons each chopped fresh coriander and/or mint
- salt and pepper to taste
- sesame seeds, to garnish (Optional)
