FISH****The Easiest Crispy Pan-Seared Fish

10/03/15-VVG for both and pretty easy to make
- 1 thickish white fish filet or steak (such as halibut, striped bass, sea bass, or swordfish), 5 to 8 ounces (Tried first with a Costco cod filet cut in two)
- Kosher salt and freshly ground black pepper
- grated lemon zest
- pinch of smoked paprika, chili powder or Aleppo pepper, to taste
- pinch of dried or fresh thyme or dill
- 1 tablespoons all-purpose flour
- 1 tablespoon egg substitute
- 2 tablespoons panko, as needed
- 1/2 tablespoon coconut or olive oil
- Lemon wedges or tartar sauce (either store-bought or homemade) for serving.

- 1/2 tbsp. peanut oil
- 2 cloves garlic, finely minced
- 1/2 tbsp. fish sauce

- 1/2 tbsp. brown sugar
- 2 tbsp. water
- 2 tbsp. sugar
VEG****Paprika & Red Pepper Soup with Pistachios or Almonds

This is very good as a lunch for work, I've only had it cold
- 2 tablespoons extra virgin olive oil
- 1 small onion, diced
- 2 large red bell peppers, halved lengthwise, stemmed, seeded and diced
- 1/2 fresh Thai chile and 1 medium jalapeno, stemmed and coarsely chopped
- 2 teaspoons sweet Hungarian paprika
- 1 teaspoon kosher or sea salt
- 1/2 teaspoon ground cardamom
- 1/2 cup (72 grams) roasted salted almonds or unsalted shelled pistachios
- 2 cups chicken broth
- 60 grams Philly light cream cheese
- 1 cup buttermilk
- 1/4 cup finely chopped fresh cilantro or basil
POPCORN - Bacon Spiced Popcorn Soup Topper

Place chopped bacon in medium sauce pot and cook on medium low, stirring until bacon is crisp
- 4 slices Bacon (chopped)
- 1/4 cup Popcorn Kernels
- 1 teaspoon Chili Powder
- 1 teaspoon Kosher Salt
- 1/2 teaspoon Pepper

ASIAN*****Asian Vegetable Broth

- 1 1/4 cups Asian Stock (or plain chicken broth, in a pinch)
- 100 g mixed Asian greens, such as baby pak choi, choy sum, Chinese cabbage, broccoli, baby spinach, whatever is on hand
- 3 - 4 cremini mushrooms, thinly sliced
- 1 spring onion
- fresh red, yellow and jalapeno chilli, thinly sliced, to taste (whatever is on hand)
- 1/2 teaspoon fish sauce
- 1/2 teaspoon sesame oil
- 1 teaspoon soy sauce
- 1 lime
- chopped fresh mint, basil and cilantro, to serve
- smoked tofu or poached or semi-soft-boiled egg, optional, to serve
TUNA*****Tuna Melt

* Combine all ingredients except cheese and mix well
- 1 can tuna (large) drained
- 2 tablespoons Hellmann's Light
- 1 tablespoon capers, rinsed and minced
- 2 gherkins, minced
- 1/4 sweet red pepper, minced
- 1 teaspoon dried dill
- Maldon salt and freshly ground pepper, to taste
- 4 slices light Gruyere or Provolone Cheese
SQUASH-Soy-Braised Kabocha Squash

Heat oil in 12" skillet over medium-high heat
- 2 tbsp. EVOO
- 1/2 " piece ginger, minced
- 2 cloves garlic, minced
- 3 scallions, minced, plus more for garnish, if desired
- 1/4 cup chicken or vegetable stock (lowest sodium you have)
- 3 tbsp. soy sauce
- 1 tbsp. mirin
- 1 tbsp. brown or white sugar (optional)
- 1 small kabocha squash, peeled, seeded and cut into 1" x 4" wedges
- (consider adding a bit of sesame oil and just a touch of sambal)
TOMATO****Tomato Bisque

- 2 tablespoons unsalted butter
- 1 Spanish onion, chopped
- 1 leek, sliced
- 1 carrot, chopped
- 1 stalk celery, chopped
- 4 cloves garlic, minced
- 5 tablespoons all-purpose flour
- good pinch of sea salt
- freshly ground pepper
- pinch of cayenne
- 5 cups chicken broth, homemade or low-sodium canned
- 1 (28-ounce) can San Marzano tomatoes (with liquid), roughly chopped
- 2 tbsp. tomato paste
- 3 parsley sprigs
- 3 fresh thyme sprigs
- 1 bay leaf
- 1 scant teaspoon sugar
- 1/2 cup heavy cream
- salt and freshly ground black pepper
