Place the dressing in the bottom of the jars
- 6 tablespoons Avocado Cilantro Lime Dressing (see recipe)
- 1 cup black beans, rinsed & dried
- 14 cherry or grape tomatoes, halved
- 1/2 of a red or yellow pepper, chopped
- 1 cup cooked, cold quinoa (60 grams dry)
- 3 cups organic mixed greens

- 2 tbsp. milk

- 2 tbsp. chopped walnuts, toasted
- 1 clove garlic
- 3/4 cup fresh basil leaves
- 2 tbsp. grated parmesan cheese
- Pinch each salt and pepper
- 2 1/2 tbsp olive oil

- 1 tablespoon fresh lime juice
- 1/2 tablespoon dark sesame oil
- 1/2 tablespoon bottled grated fresh ginger
- 1/2 tablespoon bottled minced garlic
- 1 teaspoon fish sauce
- 1/4 teaspoon sugar
- 2 large flour tortillas - I used Tomato-Basil
- 1 cup shredded romaine lettuce
- 1/4 cup matchstick-cut carrots (1 medium carrot)
- 1/2 to 1 very thinly sliced fresh red or green chili (depending on heat level)
- 2 tablespoons chopped fresh mint
- 2 tablespoons chopped fresh cilantro
- 4 ounces PC Fire-Roasted Sirloin Strips or thinly sliced deli roast beef
FAVA****Fava Bean, Potato, Onion and Celery Puree

Great on its own with greens as a meal or as a side substitute for mashed potatoes (much higher fibre)
- 3/4 cup dried, split fava beans
- 1 bay leaf, few sprigs fresh thyme, sprig fresh rosemary
- 14 ounces peeled and diced Yukon gold potatoes
- 1/4 - 1/2 cup roughly chopped onions
- 1 leek, sliced
- 1 - 2 stalks roughly chopped celery
- 3 cloves garlic, roughly chopped
- 2 tbsp. EVOO
- sea salt and fresh ground pepper

- 1 can Clover Leaf baby clams, drained
- 1 teaspoon olive oil
- 2 ounce finely minced pancetta
- 1/4 cup finely chopped red bell pepper (mixed colours)
- 2 tablespoons finely minced celery
- 1 finely chopped shallot
- 1 clove garlic, minced
- 1 sprig fresh thyme, optional, if on hand
- pinch of cayenne pepper (easy if using hot pancetta)
- Salt and freshly ground black pepper (easy on the salt)
- pinch of dried oregano
- 2 tablespoons dry white wine or vermouth
- juice of 2 or 3 wedges of lemon
- 8 tablespoons coarse fresh breadcrumbs or panko
- 2 tablespoonS (15 grams) grated Parmigiano Reggiano
- 45 grams 4 Cheese Italian Blend lite
- 2 tablespoons finely chopped fresh flat-leaf parsley
- grated zest of one lemon
- 3 slices microwave bacon, sliced crosswise into thin strips
- 1 teaspoon olive oil
- Lemon wedges, for serving, optional
AVOCADO TOAST****Avocado, Feta, and Mint on Toast

Use a fork to mash the avocado to a chunky paste
- 1 medium ripe avocado, in small dice
- 1 tablespoon freshly squeezed lemon or lime juice
- 2 tablespoons chopped fresh mint
- 60 grams crumbled light feta
- Maldon salt and pepper to taste
- Bread of choice - I put it on half of a toasted Harvest Bake Quinoa and Seed flavour with smoked Maldon salt and a pinch of Aleppo pepper - yummy

- 1/2 cup butter
- 1/2 cup brown sugar (she used half each of white and brown)
- 1 egg beaten
- 1 tablespoon lavender (or a few teaspoons of chopped fresh rosemary)

- TOSTADAS:
- 4 corn tortillas
- 1/2 tablespoon olive oil
- 1 cup cooked black beans
- 1/4 cup bean liquid or water
- Good pinch of ground cumin
- 1/2 cup salsa of choice, optional (oops, forgot this! )
- SALAD:
- 2 cups lightly packed shredded lettuce
- 1/2 - 1 avocado, depending on size, cubed
- pinch of hot or chipotle pepper flakes to taste
- 1-2 ounces cojita or feta cheese, crumbled
- 1 tablespoon lime juice
- 1 tablespoon olive oil
- 2 teaspoons honey
- salt and black pepper
- Cilantro, lime wedges, to garnish
SAUSAGE****Pepper and Sausage Ragu (Mario Batalli)

- 1 pound Italian sausage (3 sausages), hot or mild or combination
- 2 tablespoons extra-virgin olive oil
- 1 medium red onion, thinly sliced
- 3 cloves garlic, thinly sliced
- 3 mixed-colour bell peppers and one large jalapeno pepper, seeded, cored and cut into 1/2-inch strips
- 1 teaspoon red chili flakes
- 1 teaspoon fennel seeds
- 1 tablespoon dried oregano
- 3 tablespoons tomato paste
- 1/2 cup dry red wine
- 2 tablespoons chopped fresh Italian parsley
- Polenta or pasta, to serve
