1 Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray
- . 1 tablespoon olive oil
- 1/2 cup chopped onion (1 medium)
- 2 teaspoons finely chopped garlic
- 2 cups Progresso® reduced-sodium chicken broth (from 32-oz carton)
- 3 tablespoons Gold Medal® all-purpose flour
- 1/2 teaspoon ground coriander or cumin
- 1/8 teaspoon pepper
- 1/2 cup reduced-fat sour cream
- 2 cups shredded cooked chicken breast
- 1 cup Green Giant® Niblets® frozen corn, thawed
- 1 cup shredded reduced-fat Mexican cheese blend (4 oz)
- 1 can (4.5 oz) chopped green chiles
- 1/4 cup chopped fresh cilantro
- 8 corn or flour tortillas (6 or 7 inch)
- 1 medium tomato, chopped (3/4 cup)
- 4 medium green onions, sliced (1/4 cup)

- 12 ounces large or jumbo shrimp from Tarini's, shells removed (except for tail portion) and reserved, and deveined
- 1 tablespoon plus 1/2 teaspoon kosher salt, divided
- 1/4 teaspoon baking soda
- 1 quart water
- 1 cup dry white wine
- 1 stalk celery, diced
- 1/2 medium yellow onion, diced
- 1/2 fennel bulb, diced, or 1 teaspoon fennel seed
- 1 medium cloves garlic, smashed
- 1 (1-inch) knob fresh ginger, peeled and thinly sliced
- 1 sprig fresh tarragon (if on hand)
- 1 sprig flat-leaf parsley
- Fresh juice of 1 small lemon
- COCKTAIL SAUCE:*
- 1/4 cup ketchup
- 1 tablespoon horseradish, plus more to taste
- 1/2 tablespoon fresh juice from 1 lemon
- 1/4 teaspoon ground coriander seed (optional)
- Kosher salt and freshly ground black pepper.

- 3/4 tsp. chilli oil
- 1 clove garlic, minced
- 1/2 tbsp. sweet chilli sauce
- 1/2 tsp. kecap manis
- 3 1/2 tbsp. water or broth
- salt and freshly ground pepper
YOGURT*****Cilantro Lime Yogurt Dipping Sauce

- 2 tbsp. yogurt
- 2 tbsp. sour cream (or crema)
- grated rind of one lime and juice of one half
- 1 clove garlic, grated
- 1 tbsp. minced fresh or frozen coriander
- 1 pinch ground cumin
- pinch of sea salt
YOGURT - No-Cook Greek Yogurt Hollandaise Sauces

Combine all ingredients in a small bowl and whisk to mix well, adjusting seasonings as needed

- 1/4 cup 2% Greek Yogurt
- 2 tsp Dijon Mustard
- 2 tsp Rice Vinegar or any mild white vinegar equivalent
- 1/4 tsp Honey

- 1/2 - 1 pkg. fresh Udon noodles, 100-200 grams, boiled and drained (half is plenty)
- 1 cup of Asian broth
- 1 tsp fish sauce
- 1 tsp sesame oil
- 1 generous tsp Gochujang (depends how spicy the Kimchi is)
- 1 tsp Tamari
- 1/2 cup Kimchi, chopped if necessary
- 1 - 2 tablespoons Kimchi juice
- 1 cup baby spinach
- 1 egg, fried, poached, soft or hard boiled, cut in half
- 1 scallion chopped
- 1/4 cup cilantro, chopped
- 1 teaspoon mixed black and white sesame seeds
- TO SERVE: Juice from fresh lime wedge, chili oil, gochugaru flakes (Korean chili powder), soy sauce
