MUSSELS****Steamed Mussels in Black Bean Sauce

* Steam mussels in steamer over simmering water for 4 minutes, or in microwave according to package directions
- 1 lb. Greenshell mussels on the half shell
- 1 tbsp. EVOO
- 1 clove garlic, finely minced
- 1 tsp. finely minced ginger
- 2 green onions, finely minced
- 1 - 2 dried peppers, minced
- 1 tbsp. soy sauce
- 1 tbsp. mirin or sherry
- 1/2 tbsp. black bean sauce
- 2 tbsp. chicken stock
- 1/2 tsp. sesame oil
CIDER****Butter Grog

25/12/13 - This is very good for both, it elevates simple cider
- 1-1/2 Tbsp butter (Not sure about this - it just sticks to everything it touches - makes more sense to me to simply add a bit of butter to each mug when preparing)
- 4 cups apple cider
- 1 Tbsp brown sugar
- 4 whole cloves (Didn't have, used star anise instead)
- 2 cinnamon sticks
- Peel from 1 lemon
- Peel and juice from 1 orange
- 1 " piece ginger root, sliced
- 2 tsp rum extract
CUCUMBER****Cold Cucumber Dill Yogurt Soup

30/06/15 - Makes a good lunch, especially for fasting days
- 2 pounds cucumbers, with peel (3 English cucumbers)
- 1/2 medium red onion or 2 or 3 scallions
- 1 clove of garlic
- 2 cups 2% Greek yogurt
- 1/3 cup loosely packed fresh dill
- 1/4 cup loosely packed flat-leaf parsley (didn't have)
- 2 tablespoons loosely packed mint or tarragon leaves
- juice (and zest) of 1 lemon
- 1 tablespoon extra virgin olive oil
- salt and white pepper to taste
- sprigs of dill or mint as garnish (optional)

* Sauté onions in olive oil
- 3 tablespoons olive oil, more if needed
- 1 onion, thinly sliced
- 1 lb. eggplant, sliced
- 1 small zucchini sliced
- 1 red pepper, cored, seeded and cut into thick julienne strips

- 2 - 4 tbsp. fresh basil, torn

- GARNISHES:
- 1 serving Fresh Tomato Soup Provencal
- 2 tablespoons crumbled bacon bits (Costco), spread on a paper towel and nuked for 40 seconds
- 1/2 cup shredded romaine lettuce
- 5 halved cherry tomatoes
- 1/5 avocado, diced
- 1/4 cup croutons
- 30 grams Fior' di Latte, diced small, Optional
- drizzle of best olive oil, Optional
CHORIZO****Farro with Spanish Chorizo, Feta and Dill

- 3/4 cup farro or spelt (6 ounces)
- Kosher salt
- 1 tablespoon extra-virgin olive oil
- 126 grams hot or mild dry Spanish chorizo, very thinly sliced (1/2 PC sausage)
- 1 medium shallot, minced
- 2 cloves garlic, thinly sliced
- 1/4 cup minced celery
- 1/4 - 1/2 cup chicken stock
- 2 ounces feta cheese, crumbled or thinly sliced
- 2 tbsp. chopped dill
YOGURT****Yogurt Mustard Sauce

- 1/4 cup plain Greek yogurt
- 1/4 cup Dijon mustard
- 1 tbsp. honey
- 1/4 cup lemon juice
- 3 tbsp. minced fresh dill (optional)
- Dash of salt
ASIAN-Chinese Hot & Sour Soup

1. In a saucepan, heat the vegetable oil over medium-high heat until hot
- 1 tablespoon olive oil
- 1 garlic clove, smashed and minced
- 1 tablespoon minced fresh ginger
- 4 scallions, white and green parts, minced, plus more for garnish
- 7 - 8 ounces ground pork or thinly shredded pork tenderloin, optional
- 4 cups store-bought or homemade chicken stock
- 1 package firm or extra-firm tofu, cut into 1/2" x 1/8" strips
- 3 dried shiitake mushrooms, soaked in 1 cup of water and thinly sliced
- 1 cup mushroom soaking water
- 4 or 5 fresh mushrooms, shiitake or cremini or combination, wiped clean and thinly sliced
- 1 tablespoon dried, rehydrated minced wood ear mushroom
- 1 teaspoon granulated sugar
- 2/3 cup rice vinegar, or to taste
- 3 tablespoons soy sauce, or to taste
- 1 teaspoon freshly ground black pepper, or to taste
- 1 tablespoon sesame oil, plus more for garnish
- 1 tablespoon Sriracha sauce, or to taste
- 2 large eggs
- White or black pepper for garnish
- chopped fresh coriander for garnish
- hot chili oil for garnish
Chicken - Chopped Cobb Mason Jar Salad

Divide ingredients between mason jars
- 2 - 32 ounce Mason Jars
- 4 tablespoons creamy buttermilk blue cheese dressing (see recipe)
- 20 cherry tomatoes, halved
- 2 mini cucumbers, sliced
- 1/4 small red onion, thinly sliced
- 1 hard-boiled egg, chopped or sliced
- 1/2 avocado, chopped (drizzle with lime juice before adding to jar)
- 60 grams Kraft Tex Mex light shredded cheese
- 2 slices cooked crispy bacon, crumbled
- 2 ounces diced poached chicken or turkey
- 2 slices rosemary ham, cut into pieces
- 3 cups chopped romaine lettuce
