BEAN****Ribollita with Italian Pork Meatballs

VVG for both. Next time, make the meatballs bite-sized though because this time, using the small scoop I have, they
- MEATBALLS:
- 1 pound ground pork
- 1/3 cup panko
- 1 large egg
- 3 tablespoons parmesan
- 1 teaspoon chili flakes (this is just the right amount)
- 1 teaspoon fennel seeds
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons finely minced Italian parsley, fresh or dried
- SOUP:
- 4 tablespoons olive oil
- 2 ounces (2 slices) bacon, cut into lardons, or pancetta, diced
- 1 large carrot, finely chopped
- 1 large celery stalk, finely chopped
- 1 medium red onion, finely chopped
- 1 large leek, finely chopped
- stems from Swiss chard, diced
- 2 cloves garlic, thinly sliced
- 1 tablespoon tomato paste
- bouquet garni with rosemary sprig, bay leaf, thyme and sage
- 1 can fire-roasted tomatoes
- 4 cups chicken stock
- 1 piece parmesan rind, removed prior to serving
- 1 bunch Swiss chard (I used rainbow), trimmed and shredded, stems added with onions (could also use cavolo nero or combination)
- 1 can cannellini beans, undrained
- grated fresh parmigiano reggiano or pecorino romano, or 4 cheese Italiano Light to serve
- large, soft homemade croutons or toasted ciabatta, to serve, optional
SQUASH - Roasted Chili Lemongrass Squash

Toss together squash, oil, salt and pepper; spread on foil-lined rimmed baking sheet
- 4 - 6 Servings
- 2 pepper squash, halved, seeded and cut in 1-inch wedges
- 1/2 tsp each salt and pepper
- 3 tbsp fresh cilantro
- 2 tbsp lime juice
- 3 tbsp Chili Lemongrass Oil
LENTIL-Lentil, Apple and Radicchio Salad

This salad is reminiscent of a Waldorf salad, but the addition of lentils moves it into the dinner category
- 1 shallot, thinly sliced
- 3 tbsp (45 mL) extra-virgin olive oil
- 1/2 tsp (2 mL) lemon zest
- 3 tbsp (45 mL) lemon juice
- 3/4 tsp (4 mL) salt
- Pinch pepper
- 2 cups (500 mL) cooked green or brown lentils, cooled
- 1 head boston lettuce, thinly sliced
- 1/2 head radicchio, quartered, cored and thinly sliced
- 1 Granny Smith apple, julienned
- 1 rib celery, thinly sliced
- 1/2 cup (125 mL) chopped dried cranberries
- 1/2 cup (125 mL) chopped toasted unsalted walnuts
- 1/3 cup (75 mL) crumbled goat cheese
QUINOA-Quinoa Pilaf

- 1 1/2 tablespoons extra-virgin olive oil
- 2 small shallots, chopped
- 1/2 small red pepper, stemmed, seeded, deveined and chopped into 1/2-inch pieces
- 1/2 teaspoon kosher salt, plus extra for seasoning
- 1/4 teaspoon freshly ground black pepper, plus extra for seasoning
- 3/4 cup quinoa, well rinsed
- 2 tablespoons white wine, such as pinot grigio
- 3/4 cup low-sodium chicken broth
- 1/2 packed cup arugula, chopped
- 1/4 cup slivered almonds, toasted and coarsely chopped
- 1/4 cup chopped fresh mint
- 1/2 medium cucumber, peeled, seeded and diced into 1/2-inch pieces
- Zest of 1/2 lemon
FISH*****Crispy Fish with Lentils du Puy and Two-Mustard Sauce

We both loved this Update - 09/01/15 - made with 1 Costco Mahi Mahi filet, divided in two, great again
- 1 small carrot, diced finely
- 2 small shallots, diced as finely as possible
- 2 tablespoons minced fresh fennel, if on hand
- 1 tablespoon extra virgin olive oil
- 1 clove garlic, minced
- Boquet Garni with rosemary and thyme
- Salt and pepper
- 1/3 cup lentils du Puy (this is enough - I originally did 1/2 cup, which was too much)
- 1/4 cup dry white wine
- 1 1/2 cups chicken or vegetable broth
- 1 tablespoon freshly chopped flat leaf parsley (If you have it)
- 8 ounces cod, sea bass, halibut or salmon, cut into 2 portions
- 1 teaspoon unsalted butter
- 1 teaspoon olive oil
- 1/4 cup greek yogurt or crème fraîche
- 1 tablespoons Dijon mustard
- 1 tablespoon whole grain mustard
- 1 tablespoon whipping cream
- Zest of 1/2 lemon
Chilled Creamy Cucumber Soup - 3 Points

- 1 cup labneh (Lebanese strained yogurt) or 2% Greek yogurt (no need to drain it)
- Kosher salt and freshly ground black pepper

- 1 cup fresh flat-leaf parsley leaves
- 1/2 cup fresh mint leaves
- 2 tablespoons coarsely chopped preserved lemon, plus more for serving
- 1/2 finely chopped seeded jalapeno or serrano chile, plus sliced chile for serving
