- 33 ⁄4 cup frozen cherries (105 grams)
- 1oz1 oz dark chocolate, broken into pieces (I used Lindt sea salt the first time)

- 1 pound small carrots with tops, scrubbed, tops trimmed to 1/2”
- Kosher salt
- 1/2 tablespoon sugar
- 1/2 teaspoon English mustard powder
- 1/2 teaspoon hot smoked Spanish paprika
- 1/2 teaspoon ground cumin
- 1/4 teaspoon ground coriander or fennel
- 2 tablespoons EVOO
- Freshly ground black pepper
- 1/4 cup plain Greek yogurt
- 1/2 tablespoon harissa paste
- 1 teaspoon chopped fresh thyme, plus more
- 1/2 teaspoon finely grated lemon zest, plus more
- Lemon wedges (for serving)

VV Good for both - served with greek yogurt marinated chicken kebabs
- 1/2 cup greek yogurt
- 1 tbsp. EVOO
- 3 tbsp. finely chopped cilantro (or mint or chives)
- 1 tbsp. lemon juice
- 1 tsp. minced or grated garlic
- 1/4 tsp. cayenne
GARLIC - D'Italiano Garlic Toast

- Preheat oven or toaster oven to 400.

- TO FINISH:
- 1 tsp. EVOO
- 1 tsp. unsalted butter
- 3 tbsp. minced shallot or onion
- 3 tbsp. minced celery
- 3 tbsp. minced leeks
- 1 clove garlic, thinly sliced or minced
- 4 slices prosciutto or serrano or grandpa ham, sliced (Optional)
- 1 tbsp. white wine
- 1/3 cup arborio rice
- 1 1/2 cups chicken broth, plus additional as needed
- 1 cup frozen peas
- 1 tbsp. unsalted butter
- 1 tbsp. heavy cream
- 4 tbsp. parmigiano reggiano
- salt and pepper to taste
- 2 tablespoons chopped fresh parsley and/or basil
- grated zest of 1/2 lemon
RISOTTO****Baked Risotto with Asparagus, Spinach, and Parmesan

Preheat oven to 400°. Heat oil in a saucepan over medium heat
- 2 servings
- 1 tbsp. EVOO
- 1 shallot, thinly sliced
- 1 ounce pancetta, finely diced (Optional)
- 1/4 cup Arborio
- 1 ounce baby spinach (or spinach/arugula mix)
- 2 tbsp. white wine
- 2/3 cup chicken broth
- Malden salt, to taste
- pinch of grated nutmeg
- 1/2 - 3/4 ounce grated parmigiano reggiano or asiago or mixture
- 8 spears asparagus, cut in 1" pieces
RISOTTO****Brown Butter Risotto with Asparagus or Caramelized Raddichio

* *Heat* a bit of olive oil in a small frying pan and *frizzle* sage until crispy and set aside
- 3 servings
- 1 1/2 cups chicken broth
- 1 tbsp. EVOO
- 1 tbsp. unsalted butter
- 2 tbsp. chopped fresh sage
- 1 shallot, finely chopped
- 1 clove garlic
- 3/4 cup Arborio rice
- 2 tbsp. Cognac
- 1/2 cup white wine
- 1 1/2 ounces grated cheese - sartori merlot or parmigiano reggiano or pecorino romano or combination
- 1 tbsp. unsalted butter
- 8 - 10 spears asparagus - cut into 1" lengths and steamed or lightly sauteed or broiled
- 1 tsp. truffle oil
- 1 tbsp. chopped fresh chives - optional (I've never had them on hand)
- Kosher salt and freshly ground black pepper
STIR FRY****Shredded Pork in Fish Sauce - 5 Points

Very good but not spicy enough
- 12 12 12 oz. pork tenderloin
- 3 3 3 -4 dried chinese mushrooms, soaked (it calls for soaked Wooden Ears)
- 2 3 2 3 2 - 3 stalks celery
- 1/2 1/2 1/2 red pepper
- 1/2 1/2 1/2 yellow pepper
- 1 1 1 teaspoon salt
- 1 1/2 1 1/2 1/2 tbsp. cornstarch
- 1 1 1 slice ginger root, peeled and finely chopped
- 1 1 1 clove garlic, finely chopped
- 2 2 2 scallions, finely chopped
- 1 1/2 1 1/2 1/2 tbsp. soy sauce
- 1 1 1 tablespoon chili paste or chili bean sauce (Toban Dian)
- 1 1 1 teaspoon sugar
- 2 2 2 teaspoons vinegar
- 2 2 2 tablespoons peanut oil
