PORK TACOS W/ SALSA ROJA

CUISINE AT HOME
- PORK:
- 3 TBS fresh OJ
- 2 TBS veg oil
- 2 TBS lime juice
- 2 TBS minced garlic
- 2 TBS fresh chopped oregano
- 1/2 tsp kosher salt
- 1/4 tsp each black pepper and red pepper flakes
- 2-3 lb pork t-loin
- TORTILLAS
- 8 6" corn tortillas
- 1 cup canned refried black beans
- 1 cup shredded Monterey Jack Cheese
- GRILLED SALSO ROJAS
- 1 1/4 labs Roma tomatoes
- 1/2 small onion
- 2 cloves garlic, wrapped in foil
- 1 jalapeño
- 1/4 cup chopped fresh cilantro
- 1/4 tap kosher salt
PERFECT HARD-COOKED EGGS

1. Place eggs in saucepan that is large enough to hold them in a single layer and cover with 1 1/2" cold water

Cook shells in pot of boiling water, drain
- 12 oz dry medium shell pasts
- 3 TBS olive oil
- 1 cup minced onions
- 1/2 cup sliced kalamata olive
- 1/4 cup diced oil-packed sun-dried tomatoes
- 2 TBS tomato paste
- 1 TBS minced fresh garlic
- 1 tsp each sugar and red pepper flakes
- 1/2 tspdried oregano
- 1 lb ground pork
- 3 TBS balsamic vinegar
- 28 ox diced tomatoes w/ juice
- 1/2 cup chopped fresh parsley

SCOTTISH BEEF AND POTATO PIE

- For the Beef and Potatoes:
- 1 pound boiling potatoes
- 2 teaspoons kosher salt
- 2 tablespoons vegetable oil
- 1 medium onion, chopped
- 3 tablespoons all-purpose flour
- 1 pound ground beef sirloin or top round
- 1 cup beef broth
- 2 teaspoons worcestershire sauce
- 1 tablespoon tomato ketchup
- 1/4 teaspoon freshly ground black pepper
- For the Sauce:
- 2 tablespoons unsalted butter, softened
- 2 tablespoons all-purpose flour
- 1 cup milk
- 1 cup grated sharp white cheddar cheese ( about 4 ounces)
- 1 large egg yolk
- 1/4 teaspoon kosher salt
- Pinch of grated nutmeg
CLASSIC BREAD PUDDING

Challah is an egg-enriched bread that can be found in most bakeries and supermarkets
- 2 tablespoons light brown sugar
- 3/4 cup plus 1 tablespoon granulated sugar (5 1/4 ounces)
- 1 (14-ounce) loaf challah bread, cut into 3/4-inch cubes (about 10 cups) (see note)
- 9 large egg yolks
- 4 teaspoons vanilla extract
- 3/4 teaspoon table salt
- 2 1/2 cups heavy cream
- 2 1/2 cups milk
- 2 tablespoons unsalted butter , melted

- 2 large cloves garlic, minced
- 2 TBS EVOO
- 2 - 10 3/4 oz cans of tomato soup
- 1/4 cup sun dried tomatoes, chopped
- 2 cups half and half (I use fat free)
- 2 cups chicken stock
- 1 tsp onion powder
- 1 TBS Italian seasoning
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 9 oz package cheese filled tortellini
- 1/2 cup shredded Parmesan cheese
CRAB MEAT DIP

1. Finely chop scallion and mince garlic
- 6 scallions
- 1 clove garlic
- 1 # jumbo lump crab meat
- 8 oz cream cheese softened
- 1/3 cup sour cream
- 1 TBS drianed bottled horseradish
- 2 tsp fresh lemon juice, or to taste
- 1 tsp Dijon mustard
- 1 tsp worcestershire
- 1/2 tsp salt
- 1/4 tsp cayenne
