Honey Glazed Chicken

Heat oven to 350. In a shallow dish combine the flower and seasonings
- 2 lbs of diced uncooked chicken breast
- 1/3 cup flour
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 4 TB butter
- 1/2 cup honey
- 6 TB lemon juice
- 4 TB soy sauce
- 1 tsp. ground ginger
Almond-Crusted Tilapia

- 1/2 cup honey
- 1/2 cup Dijon mustard (or country/grainy mustard)

- 3 cups fresh sliced mushrooms

- Peanut Dressing:
- Ingredients
- 3 tablespoons toasted sesame seeds
- 12 ounces linguine
- 1/4 cup creamy peanut butter or almond butter
- 3 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon melted coconut oil
- 1 tablespoon grated fresh ginger
- 1 tablespoon honey
- 1 tablespoon Sriracha (or Sameal Oelek)
- 1 teaspoon sesame oil
- Zest and juice of 1/2 lime
- 1/2 package frozen chinese vegetables
- 1 large chicken breast cut into strips or small cubes
- 1/2 cup loosely-packed chopped fresh cilantro
- Chicken broth or water to add if needed
- 1/4 cup roughly chopped skinless roasted peanuts, for garnish

- 1/2 cup (1 stick) unsalted butter, plus more for greasing
- 1/2 cup milk
- 3 green onions, chopped

Sweet, Sour, and Perfectly Spicy Gluten-Free Asian Stir Fry Sauce

Put all of the ingredients below in a sauce pan except for the cornstarch/water slurry, and heat until boiling
- 6 tablespoons Bragg’s Amino Acids OR soy sauce OR tamari
- 6 tablespoons plain rice vinegar
- 3 tablespoons coconut oil
- 1 tablespoon sesame oil
- 2-3 tablespoons coconut sugar
- 6 minced garlic cloves
- 1 tablespoon fresh grated ginger
- 1-2 teaspoons Srirachi…I like it hot, so I add more.
- 2 teaspoons corn starch (for the slurry)
- 2 teaspoons water (for the slurry)
Crispy Roasted Lemon Chicken Thighs

Pat chicken thighs very dry, then place in bowl
- For garnish:
- 8 bone-in chicken thighs
- 1/2 cup olive, grapeseed, or other vegetable oil
- Juice and zest of 2 large lemons + 1 additional lemon thinly sliced, for garnish
- 2 garlic cloves, minced
- 3 tablespoons dijon mustard
- kosher salt and black pepper
- 1 bunch rosemary, cut into 4-inch pieces (optional)
Baked Chicken Chimichangas

- 2 cups cubed cooked chicken breast
- 1-1/2 cups picante sauce, divided
- 1/2 cup shredded reduced-fat cheddar cheese
- 2/3 cup chopped green onions, divided
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano, or 2 teaspoons cilantro
- 6 flour tortillas (8 inches), warmed
- 1 tablespoon butter, melted
Spicy Cheese Filled Chicken Breasts

Combine the cheese and arugula in a bowl
- 4 oz. shredded pepper jack cheese
- 2 c. baby arugula, roughly chopped
- 2 large skinless, boneless chicken breasts (12 oz each)
- 1 T. olive oil, plus more for brushing
- Koser salt
- 1 1/2 - 2 T. monterey grill chicken seasoning or cajun spice blend
- vegetable oil for the grill
