Spicy Cheese Filled Chicken Breasts

Ingredients
- 4 oz. shredded pepper jack cheese
- 2 c. baby arugula, roughly chopped
- 2 large skinless, boneless chicken breasts (12 oz each)
- 1 T. olive oil, plus more for brushing
- Koser salt
- 1 1/2 - 2 T. monterey grill chicken seasoning or cajun spice blend
- vegetable oil for the grill

Step 1
Combine the cheese and arugula in a bowl. Cut a deep 2" wide pocket in the thickest part of each chicken breast with a paring knife (or pound thin) Stuff with the arugula mixture (or if thin, spread on one side and seal). Brush with olive oil and season with salt and cajun spice blend, or if using monterey chicken seasoning omit salt. Preheat grill to high and brush the grates with vegetable oil. Grill the chicken until blackened and a thermometer inserted into the thickest part registers 155 degrees, 8-10 minutes per side. Can brown in oven proof pan until browned, then bake in the oven @ 350 for approx. 15 min. or until juices run clear.
Let rest, then slice.
