Mike Sternisky's Eggplant Rollatini

Sprinkle eggplant with kosher salt and arrange in strainer for about 10 minutes
- All purpose flour
- 4 large eggs beaten with a little water to dilute
- Italian bread crumbs
- Parmesan or romano grated cheese
- 2/3 medium eggplant sliced lengthwise as thin as possible
- 3 About 3 cups coursely grated whole milk mozerrella cheese
- 1 large container of whole milk ricotta cheese
- 3/4 cup chopped fresh basil leaves
- 1 egg
- 3 cups purchsed marinara sauce
- kosher salt
Luncheon Crab Bake

Break Crabmeat in chunks, removing any boney bits
- 2- 6 1/2 oz. or 7 1/2 oz can (about 1 cup) Crabmeat drained.
- 1 cup soft breadcrumbs
- 1 cup mayo or salad dressing
- 3/4 cup milk
- 6 hard cooked eggs finely chopped
- 1/3 cup chopped onion
- 1/4 cup sliced stuffed green olives
- 3/4 teas. salt
- 1/2 cup soft buttered bread crumbs
Aunt Helena's Pork

Mix all ingredients and boil hard for 10 minutes
- 1/2 cup water
- 1/4 cup vinegar
- 3 tabl. worch. sauce
- 1/4 tsp. cayenne papper
- 1 tsp. sugar
- 1/4 tsp. black pepper
- 1 tsp dry mustard
- 1 lemon (with rind) cut fine
- 1/2 cup ketchup
- 1/2 stick butter
- Little salt
- 3 lb. pork roast
- Hickory smoke flavored sauce
Easy French Toast Bake

1. Melt butter in microwave & add brown sugar
- 1/2 cup melted butter (1 stick)
- 1 cup brown sugar
- 1 loaf of thickly sliced bread
- 4 eggs
- 1 1/2 cup milk
- 1 teaspoon vanilla
- Powdered sugar for sprinkling
- Cinnamon for sprinkling

- 1 - Premium Ice Cream such as Cherry vanilla, chunky monkey etc.
- 1 1/2 cups self rising flour.
Potato Puffs

- 3 cups of mashed potatoes
- 2 eggs
- 1/3 cup sour cream (optional extra for serving)
- 1 heaping cup shredded sharp cheddar cheese
- 2 tablespoons grated Parmesan
- 2 tablespoons chopped chives or parsley
- Salt and black pepper, to taste
