SOUP - Tomato Soup (Rome on the Range by Tara Dreger)

Preheat over to 450 degrees F
- 8 large plum or Roma tomatoes (about 2 lbs/907g)
- 2 large red bell peppers, seeded and coarsely chopped
- 1 large red onion, coarsely chopped
- 1 tbsp minced garlic
- 1 tbsp olive oil
- 2 tbsp each minced fresh thyme and fresh rosemary (or 2 tsp dried italian seasoning)
- 2 cups beef broth, divided
- 1 cup V8 juice
- 1/4 cup chopped fresh basil leaves, or 2 tsp dried
- 1 tbsp balsamic vinegar
- 1 tsp granulated sugar
- 1/2 tsp salt
- 1/2 tsp freshly ground black pepper
- 1/4 tsp crushed red pepper flakes
- MEATBALLS
- 12 oz (340g) extra-lean ground beef
- 1/4 cup minced shallots or onions
- 1/4 cup unseasoned dry bread crumbs
- 2 tbsp grated Parmesan cheese
- 1 egg
- 1/2 tsp dried Italian seasoning
- 1/4 tsp salt
- 1/4 black pepper
DESSERT - Rhubarb Torte

Preheat oven to 350 degrees F (175 degrees C
- 1 c flour
- 2 tbsp confectioners' sugar
- 1/2 c butter or margarine
- 1 1/4 c sugar
- 2 tbsp flour
- 1/3 c cream or milk
- 3 egg yolks
- 2 1/4 c finely cut rhubarb
- 3 egg whites
- 1/2 tsp cream of tartar
- 6 tbsp sugar

Cream butter until smooth
- ¾ cup butter/margarine
- 1 ½ cups brown sugar
- 1 egg
- 1 tsp vanilla
- 1 cup chopped walnuts/pecans
- 1 ½ cups flour
VEGETABLES - Potatoes Extraordinaire (by Company's Coming)

Make this a day ahead or simply mash and put in the oven to hold about an hour ahead
- 5 lbs potatoes, peeled
- salted water
- 8 oz cream cheese, softened
- 1 cup sour cream
- 1/4 cup butter or margarine, softened
- 1 tsp salt
- 1/4 tsp pepper
- butter for garnish
- paprika for garnish
EGGS - Poached Eggs

1. Fill poacher with warm water to 1/4" below bottom of cups
- Eggs - as needed
ENTREE - Sesame Pork Strips

Brown sesame seeds over medium-high heat in a large, dry skillet
- 2 tbsp sesame seed
- 1 tbsp sesame oil
- 1 lb pork boneless top loin
- 2 tbsp honey
- 3 tbsp soya sauce
- 1/2 tsp ginger
- 1/3 lb snow peas
ENTREE - Celery Salmon Loaf

Combine all ingredients well and pack into greased loaf pan
- 1 lb canned salmon or 2 - 7 oz cans (include liquid)
- 1 10 oz can of Campbell's Cream of Celery Soup
- 1 cup dry bread crumbs
- 2 eggs beaten
- 1/2 cup chopped onion
- 1 tbsp lemon juice
MUFFINS - Oatmeal Muffins

Preheat oven to 425° F (220° C)
- 1 c rolled oats
- 1 c buttermilk
- 1 c flour
- 1 tsp salt
- 1/2 tsp baking soda
- 1 tsp baking powder
- 1/2 c brown sugar
- 1/2 c melted margarine or vegetable oil
- 1 egg
MUFFINS - Scones

Mix all ingredients together until the dough leaves the bowl clean
- 1/2 c sugar
- 3 c flour
- 2 tsp cream of tartar
- 1 tsp baking soda
- 1/2 tsp salt
- 1/4 c butter
- 1 egg
- 1 c milk
- 3/4 c raisins (cover with hot water 5 minutes, drain)
DESSERT - Land of Nod Cinnamon Buns (by Shawna Logan)

Before you put the cat out and turn off the lights, grease a 10" bunt pan and add frozen rolls
- 20 frozen dough rolls
- 1 cup brown sugar
- 1/4 cup vanilla instant pudding
- 1 - 2 tbsp cinnamon
- 3/4 cups raisins (optional)
- 1/4 - 1/2 cup melted butter
