Tomato and Cheddar tart

With the rack in lowest position, preheat oven to 375°F (190°C)
- 1/2 lb (250 g) puff pastry, thawed
- 1 tbsp (15 ml) Dijon mustard
- Fresh basil
- 3-4 large Italian tomatoes cut into 1/2” (1 cm) slices
- 1 cup (250 ml) grated Canadian Cheddar
- Salt and ground pepper to taste

- Chipotle Vinaigrette:
- 1 cup quinoa
- 1 each sweet red pepper and sweet yellow pepper, quartered

- 1-1/4 cups (300 mL) quick-cooking rolled oats
- 1-1/2 cups (375 mL) Milk

- 1/3 cup (75 mL) granulated sugar
