Sophia Loren's Spaghetti con Pomodoro Crudo

Cook the pasta until just al dente
- 1 1/2 pounds spaghetti
- 2 pounds tomatoes, not quite ripe, chopped
- 1/2 pound fresh mozzarella, thinly sliced
- 2 medium red or Vidalia onions (or less), thinly sliced
- 1/4 cup pitted Sicilian green olives, roughly chopped
- 2 tablespoons drained capers
- 1/4 cup minced Italian parsley
- 10 to 12 chopped fresh oregano leaves
- or 1/4 teaspoon dried
- 1 to 2 cloves garlic, crushed
- Salt
- Freshly ground pepper
- 1/2 cup extra-virgin olive oil
- Freshly grated Parmigiano cheese (optional)
Chicken and Dumplings

1. In a Dutch oven (or a 5- to 6-quart heavy pot with a tight-fitting lid), heat butter over medium
- 3 tablespoons butter
- 1 medium onion, cut into 1-inch pieces
- 5 medium carrots, cut crosswise into 1 1/2-inch pieces
- 1/2 teaspoon dried thyme
- 1 cup (spooned and leveled) all-purpose flour
- 1 can (14.5 ounces) reduced-sodium chicken broth

Romaine Salad With Lemon Caper Dressing

This dressing can be made ahead and refrigerated
- Lemon Caper Dressing:
- 6 cups chopped romaine lettuce
- 2 cups shredded radicchio lettuce
- 1 small sweet onion , thinly sliced
- 1/2 cup crumbled feta cheese
- 2 tbsp minced fresh parsley
- 2 tbsp minced sweet onion
- 2 tbsp extra-virgin olive oil
- 2 tbsp vegetabIe oil
- 2 tbsp lemon juice
- 1 tsp drained rinsed capers
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/4 tsp granulated sugar
Cedar Plank Salmon

• After removing the plank from the liquid, pat dry, and coat with olive oil on both sides of the plank
- These western Red cedar planks are the most common used form of grilling plank and if used carefully in a slow cooking method will impart a wonderful delicate and deep smokey flavor to the salmon.
- Soak the board in water for 20-45 min.
- Note: You can add any flavor you wish to the plank by using different liquids, e.g. Ginger Ale, Beer, Sea salt, lemon juice, etc. Different liquids will produce different outcomes.
Homemade Tomato Salsa Recipe

Homemade Tomato Salsa is about as simple to make as it gets and uses all fresh ingredients for maximum flavor
- 4 Roma tomatoes, diced
- 1/2 cup diced onions - I used a sweet Vidalia onion
- 3 Serrano Chiles, seeded and finely chopped
- 1/4 cup freshly chopped cilantro
- 1/2 tablespoon freshly minced garlic
- the juice of 1/2 a lime
- 1 teaspoon kosher salt
Pulled pork with ginger-bourbon sauce

Place onion slices in an even layer in slow-cooker insert
- FOR SAUCE:
- 1 medium onion, thinly sliced
- 2 kg boneless pork shoulder
- 355 mL can ginger ale
- 1 cup apple jelly
- 1 cup ketchup
- 1/2 cup apple-cider vinegar
- 1/3 cup bourbon
- 2 tbsp Worcestershire sauce
- 2 tsp Tabasco sauce
- 1 tsp garlic powder
- 1/2 tsp ground ginger
BISCUIT MIX

- 9 cups flour
- 1 1/2 cups non-fat dry milk
- 1/2 cup granulated sugar
- 3 tsp. baking powder
- 1 tsp. baking soda
- 3 tsp. salt
- 2 1/4 cups vegetable shortening (Crisco)
Salsa Pork Chops and Rice

- 1 tbsp (15 mL) butter
- 4 boneless pork chops
- 1 cup (250 mL) long-grain white rice
- 1 tsp (5 mL) each, salt and dried oregano
- 1 1/2 cups (375 mL) salsa or sweet chili sauce
- 1/2 cup (125 mL) chicken stock
- 2 tbsp (30 mL) all-purpose flour
- 2 cups (500 mL) milk
- 2 cups (500 mL) frozen mixed chunky vegetables, thawed
- 1/2 cup (125 mL) shredded Cheddar or Monterey Jack cheese
Perfect Scrambled Eggs

- 6 large eggs
- 6 teaspoons (1 teaspoon for each egg) low-fat milk
- 3 dashes of salt (1 dash for every two eggs)
