French Onion Soup

Simple and just like you would have when dining out
- Quartered and thinly sliced white onion 4 1/4 cups 1 L
- (about 1 1/2 lbs., 680 g)
- Water 4 cups 1 L
- Beef bouillon powder 4 tsp. 20 mL
- French bread slices, cut to fit 4 4
- Grated mozzarella cheese 1 cup 250 mL
- Grated Parmesan cheese, sprinkle
MOTHER'S SWISS STEAK

Pound steak with flour. In pressure cooker, put Wesson oil
- 1 1/2 lbs. round steak
- 1/4 c. flour
- 1 tsp. salt
- 1/2 tsp. pepper
- 3 tbsp. Wesson oil
- 6 medium potatoes
- 1 lg. onion
- 2 cans tomatoes
- 2 carrots
- 1 stick celery
Onion and Mushroom Soup

1. Cut or break dried mushrooms into small pieces and place in a heat-safe bowl
- 1 pkg. (60 g/2 oz.) dried porcini or similar mushrooms
- 250 ml (1 cup) boiling water
- 75 ml (5 tbsp) butter, divided
- 3 large sweet onions, thinly sliced
- 50 ml (1/4 cup) white wine
- 2 leeks, white parts only, cleaned and sliced
- 2 shallots, chopped
- 2 cloves garlic, minced
- 30 ml (2 tbsp) chopped fresh thyme
- 30 ml (2 tbsp) chopped fresh rosemary
- 45 ml (3 tbsp) all-purpose flour
- 500 ml (2 cups) chicken broth
- 500 ml (2 cups) beef broth
- Salt and ground black pepper, to taste
- 4 slices stale crusty bread
- 4 slices fontina cheese
- Chopped fresh chives, for garnish

- 1/3 cup lemon juice
- 1 tbsp Dijon mustard

- 1 large can tomatoes
- 4 cups beef broth or water
- 1 tablespoon red wine vinegar
- 1 tablespoon prepared mustard
- 4 large carrots, cut in 1 inch chunks
- 1 good sized parsnip cut in pieces
- 1 good sized rib of celery diced
- 3 large potatoes, quartered (I just make mashed potatoes)
- 2 tbsp. flour or 1 tbsp. cornstarch (optional) (stirred into cold water)
