Old-Fashioned Split-Pea Soup

This is another favorite for using leftover ham from a holiday meal
- 1 1/2 cups quick-cooking split green peas
- 1 quart water
- 2 1/2 lb fully cooked ham shank
- 2/3 cup coarsely chopped onion
- 1/4 cup cut-up carrot
- 1 parsnip chopped
- 1/2 cup coarsely chopped celery
- 2 parsley sprigs
- 1 clove garlic
- 1 bay leaf
- 1/2 tsp sugar
- 1/8 tap dried thyme leaves ( I use fresh if I have it)
- 1/8 tap pepper
- 1 can chicken broth
Roasted-cauliflower "rice"

Position oven rack in top third of oven
- 1 small cauliflower, cut into small florets
- 1 tsp safflower oil
- 1/4 cup chopped capers
Easy Salmon and Bok Choy

- 1-1/2 pounds salmon, patted dry
- 3 tablespoons finely chopped fresh ginger
- 2 cloves garlic, minced
- 1/2 cup low-sodium chicken broth
- 3 tablespoons rice vinegar
- 2 tablespoons sugar
- 2 tablespoons low-sodium soy sauce
- 1 medium-size head bok choy, trimmed and cut into 1-inch pieces, stems and leaves separated (4 cups each)
- 1 teaspoon hoisin sauce
- 1/4 cup thinly sliced scallions
Sweet & Sour Meatballs

In casserole, mix tomato sauce, brown sugar, wine vinegar, onion and green pepper
- 1 8 oz can tomato sauce
- 1/2 cup packed brown sugar
- 1/2 cup red wine vinegar
- 1/4 cup chopped onion
- 1/4 cup chopped green pepper
- 2 Tbsp cornstarch
- 2 Tbsp cold water
- 1 (8 oz) can pineapple chunks, drained
- 24 chilled cooked basic meatballs
- Rice noodles or hot cooked rice
Herb Roasted Mushrooms, Chicken, & Vegetables

Preheat oven to 425° F. In a large bowl combine oil, rosemary, salt and pepper until well blended
- 6 large garlic cloves, peeled
- 1 large red bell pepper cut in 2 inch pieces
- 3 each medium onions, cut into wedges
- 1 lb small red potatoes, halved
- 1 lb fresh white mushrooms
- 1 lbs boneless, skinless chicken breasts cut into 2 1/2 inch pieces
- 1 tsp ground black pepper
- 1 tsp salt
- 3 tsp dried rosemary, crushed
- 1 cup olive oil

- Lemon juice 3 tbsp. 50 mL
- Liquid honey 2 tbsp. 30 mL

- Coarsely grated carrot 2 cups 500 mL
- Can of whole baby 14 oz. 398 mL
- beets, drained and diced
