- 1 bag frozen potatoes

Asparagus, Chicken, and Penne Pasta

1. Bring a large pot of lightly salted water to a boil
- 1 (16-ounce) package dry whole wheat penne pasta
- 2 tablespoons olive oil, divided
- 3/4 pound skinless, boneless chicken breast - cut into bite-size pieces
- 4 cloves garlic, minced
- 12 oucnes asparagus, trimmed and cut into 1 inch pieces
- 1 teaspoon crushed red pepper flakes
- salt and pepper to taste
- 1/2 cup grated parmesan cheese
New Fashioned Bean Soup

Drain the beans. Combine all ingredients in stoneware
- 1 pound navy beans
- 1 1/2 quarts water
- 1-lb lean, boneless ham, cut into cubes

1. Thaw spinach, drain and squeeze out water
- 8 ounces cream cheese
- 1 3/4 cups (1 jar) Alfredo sauce
- 2 cups shredded mozzarella cheese
- 1/2 cup shredded parmesan cheese
- 2 tablespoones minced garlic
- 1 (14-ounce) can artichoke hearts, drained and diced
- 1 (10-ounce) package frozen spinach
- 2 tablespoons hot sauce

1. In a large stock pot, over medium-low heat, heat olive oil and saute garlic for 2 to 3 minutes
- 3 tablespoons olive oil
- 3 cloves garlic, chopped
- 2 onions, chopped
- 2 cups chopped celery
- 5 carrots, sliced
- 2 cups chicken broth
- 2 cups water
- 4 cups tomato sauce
- 1/2 cup red wine (optional)
- 1 cup canned kidney beans, drained
- 1 (15 oz.) can green beans
- 2 cups baby spinach, rinsed
- 3 zucchinis, quartered and sliced
- 1 tablespoon chopped fresh oregano
- 2 tablespoons chopped fresh basil
