Garlic Cheese Chicken Rollups

1. Preheat oven to 350 degrees F
- 4 skinless, boneless chicken brests
- 1 cup dried bread crumbs, seasoned
- 1/2 cup grated Parmesan cheese
- 1/4 cup butter, melted
- 1 (7 ounce) package garlic cheese spread
Meatballs

Mix and cook at 400 degrees F for about 15 minutes
- 1 pound ground beef
- 1 onion, chopped
- 1/3 cup bread crumbs
- 1/4 cup milk
- 1 egg
- 1 teaspoon salt

Brian's Chicken Enchiladas

1. Sautee chicken and tomatoes in skillet
- Big package of tortillas
- 2 boxes of grilled chicken strips
- 2 1/2 cans Mild Enchilada Sauce
- 4 cups cheddar cheese
- 1 can diced tomatoes
Quick Tortellini Salad

Cook tortellini according to package directions, drain, and add remaing ingredients
- 2 packages frozen tortellini
- 1 large green pepper, chopped
- 1 large tomato, chopped
- 8 oz Italian dressing
- 4 tablespoons McCormicks Salad Supreme Seasoning
Grandma's Cream de Minth Bars

Combine ingredients for bottom layer
- Bottom:
- 1/2 cup melted butter
- 1/2 cup coco
- 1/2 cup powdered sugar
- 1 egg
- 1 teaspoon vanilla (beaten with egg)
- 2 cups grahm cracker crumbs
- 1/2 cup chopped nuts
- Middle:
- 1/2 cup melted butter
- 3 tablespoons Cream de Minth
- 2 teaspoons vanilla instant pudding
- 2 cups powdered sugar
- Top:
- 1/2 cup melted butter
- 2 cups semi-sweet chocolate chips
Barbequed Ribs

Slice ribs into serving-size pieces
- 3 to 4 pounds spareribs
- 1/2 teaspoon salt
- 1/2 teaspoon ground balck pepper
- 1 onion, sliced
- 1 jar (16 oz.) barbeque sauce
Escarole and Beans

1. Heat 2 tbs. olive oil in a large skillet over medium heat
- 3 tablespoons olive oil, divided
- 2 large heads escarole
- salt and pepper to taste
- 1/4 tsp. crushed red pepper flakes
- 1 clove garlic, minced
- 2 (16 oz) cans cannellini beans, undrained
- 3 sprigs fresh parsley, chopped
Blueberry Orange Bran Muffin

1. Preheat oven to 375 degrees F
- 1/2 cup oat bran
- 1 cup wheat bran
- 1/2 cup sour cream
- 1/2 cup milk
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 2/3 cup brown sugar
- 1/2 teaspoon salt
- 1 cup fresh blueberries
- 1/3 cup vegetable oil
- 1 orange, juice and zested
- 1 egg
- 1 teaspoon vanilla extract
Healthy Banana Bran Muffins

1. Preheat oven to 400 degrees
- 1 1/2 cups bran flakes
- 1 cup mashed ripe banana (3 medium)
- 1/2 cup milk (i used skim)
- 1 egg
- 3 tablespoons vegetable oil
- 1 cup flour
- 1/4 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/8 teaspoon ground nutmeg (i used a little nutmeg and 1/4 t cinnamon)
Mock Lasagna

Cook noodles according to package directions until tender; drain
- 1 package (10oz) broad lasagna noodles, broken into bite-sized pieces
- 1 lb. ground beef
- 1/2 lb. Italian sausage
- 1 onion, chopped
- 1 clove garlic, minced
- 12-oz. Mozzarella cheese, shredded
- 1 carton (12-oz.) ricotta cheese
- 2 cans (6-oz. each) tomato paste
- 1/2 cup water
- 1/4 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 1/2 tablespoons dried parsley
- 1 teaspoon dried basil
