Red White Beans

Heat the EVOO in a skillet over medium heat
- 2 tablespoons EVOO
- 1 medium to large onion, chopped
- 2 sprigs rosemary, leaves finely chopped
- salt and pepper
- 1/4 cup tomato paste
- 1 cup chicken stock
- 2 cans cannellini beans (15 ounces each), drained
Lemon Rosemary Chicken

1. Put chicken into a large freezer bag

- 3 long sprigs fresh rosemary
- Juice of 1 lemon, with more lemons to serve
- 1 red onion
- 6 tablespoons olive oil

Home-Style Turkey Soup

Saute vegetables. Add the remaining ingredients to the broth mixture
- 8 cups reduced-sodium chicken broth
- 3 large onions, chopped
- 1 cup chopped celery
- 4 carrots, peeled and cut into thin strips
- 1/4 cup chopped fresh parsley
- 1/4 teaspoon dried thyme
- 1 bay leaf
- 1/2 teaspoon ground black pepper
- 1 cup pearl barley
- 1 can (14 ounces) unsalted tomatoes
- 1 can (16 ounces) white beans, rinsed and drained
- 1/2 pound leftover light turkey meat, cut into bite-size chunks
Pasta Carbonara (Rachael Ray)

- •1 pound rigatoni
- •1/3 pound pancetta (cured Italian meat, available at deli counter) chopped
- •Drizzle of extra virgin olive oil (EVOO), plus 2 tablespoons
- •4 or 5 cloves garlic, finely chopped
- •1/4 teaspoon crushed red pepper flakes (a few pinches) crushed in the palm of your hand
- •1/2 cup dry white wine or chicken stock
- •2 large egg yolks
- •3 tablespoons (about 2 palmfuls) grated Parmigiano Reggiano cheese, plus more for sprinkling
- •A handful fresh parsley leaves, finely chopped
- •A few grinds black pepper
'White' Chili

Put beans in medium pan and cover with water
- 1-lb Great Northern beans, soaked
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 cans (4-oz. each) green dhilies
- 2 teaspoons ground cumin
- 1 teaspoon dried oregano
- 1 1/2 teaspoons cayenne pepper
- 1/2 teaspoon salt
- 2-lbs. skinless, boneless chicken breasts
- 1 can (14.5 oz.) reduced-sodium chicken broth
- 1 cup water
Sausage Vegetable Packets
