Easter Breakfast Casserole

Cook sausage according to package directions
- 1 package (12 oz) Johnsonville Breakfast Sausage Links
- 6 english muffins, cut into 1-in cubes
- 1/4 cup butter, melted
- 1 cup (4oz) shredded cheddar cheese
- 1 cup (4oz) shredded mozzarella cheese
- 1/2 cup chopped onion
- 1/2 cup chopped red pepper
- 12 eggs
- 2 cups milk
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/4 cup bacon bits
Pumpkin Bread

Mix together dry and wet ingredients separately
- 3 Eggs
- 2 Cups Sugar
- 2/3 cup margarine, melted
- 1/2 Cup Water
- 2 1/3 Cup Flour
- 1 tsp Salt
- 2 tsp Baking Soda
- 1 tsp Cinnamon
- 1 small can Pumpkin (2 cups)
- 2/3 cup chopped nuts
- 2/3 cup chopped dates
Easy, Eat Your Plate Taco Salad

1. Adjust oven rack to center position and heat oven to 350 degrees
- 4 flour tortillas, pricked with a fork before baking
- 2 1/2 Tbs. olive oil
- Kosher salt
- 1 Tb. garlic powder
- 1 Tb. ground cumin
- 1 Tb. dried oregano
- 1 lb steak or boneless skinless chicken thighs or 4 shucked ears of corn halved crosswise
- 2 hearts of romaine, halved, cored and coarsely chopped (8 cups)
- 1 cup grape or cherry tomatoes, halved and lightly salted
- 1 yellow bell pepper, stemmed, cored and cut into strips
- 4 scallions, thinly sliced (1/2 cup)
- 1 15.5 ounce can of black beans, drained
- 4 ounces grated pepper jack (1 cup)
- 1/2 cup sour cream
- 1/2 cup salsa verde

Let mussels stand in water and salt over night
- 1 1/2 lbs Mussels
- 2 Tsp Olive oil
- 2 Onions cut in thin rings
- 1/2 cup bite size pork
- 1/2 cup bite size sweet italian sausage
- 1 stem of parsley
- pinch of pepper and paprika
Picnic Potato Salad

Best if allowed to chill thoroughly
- Dressing:
- 6 med potatoes (2 1/2#)
- 12 green onions, sliced
- 4 hard cooked eggs, chopped
- 1 C celery, thinly sliced
- 12 strips bacon, crisp and crumbled
- 1 4oz jar pimentos, drained
- 1 C chopped dill pickle
- 1 1/2 C mayo
- 1 T horseradish (prepared)
- 2 t prepared mustard
- 1 T dill pickle liquid
- salt and pepper

- 1/2 tsp salt

- 1/2 cup pineapple juice
- 1/4 cup soy sauce
- kosher salt and black pepper
- 1 1/2 pounds flank steak
- 1 pound new potatoes (about 10), halved or quartered if large
- 12 ounces green beans, trimmed and cut into 1-inch pieces
- 1 4.5-ounce can chopped green chilies
- 2 tablespoons olive oil
- 1 tablespoon white vinegar
- 1/2 teaspoon ground cumin
- 1/4 cup fresh cilantro leaves

- 1/2 pound elbow macaroni
- 3 tablespoons butter
- 3 tablespoons flour
- 1 tablespoon powdered mustard
- 3 cups milk
- 1/2 cup yellow onion, finely diced
- 1 bay leaf
- 1/2 teaspoon paprika
- 1 large egg
- 12 ounces sharp cheddar, shredded
- 1 teaspoon kosher salt
- Fresh black pepper
- 3 tablespoons butter
- 1 cup panko bread crumbs

Spicy hummus with canned chickpeas
- Ingredients
- 1 (14.5 ounce) can chickpeas (garbanzo beans), drained
- 2 rounded tablespoons tahini sesame paste, found in both dairy and dry specialty foods sections
- A drizzle extra-virgin olive oil
- 1/2 teaspoon crushed pepper flakes
- 1 teaspoon (1/3 palm full) ground cumin
- 1 teaspoon (1/3 palm full) ground coriander
- 1 clove garlic, crushed
- Coarse salt
- 1/2 lemon, juiced
- Pita breads, grilled and cut into wedges for dipping
