- 3 tablespoons White wine
- 10 Peppercorns; crushed
- 2 tablespoons Finely-chopped shallots
- 1 tablespoon Chopped tarragon
- 1 tablespoon Water
- 3 Egg yolks
- 1 cup Unsalted butter; melted
- Salt; to taste
