Cold Day Chicken Soup

In a large pot over medium heat, melt coconut oil
- 1 tablespoon coconut oil
- 1 organic yellow onion, chopped
- 3 carrots, grated
- 2 celery stalks, chopped
- 2 cloves garlic, crushed
- 1 tablespoon curry powder
- 8 cups low-sodium chicken broth
- 3 cups diced roasted chicken
- 1 bay leaf
- 1 organic apple, chopped
- 1 dash pepper
- 1/2 teaspoon dried thyme
- Zest of 1 lemon
- 2 cups unsweetened coconut milk
- 1 dash salt
Lemon-Scented Quinoa With Tahini & Chickpeas

1. Rinse the quinoa in a fine-meshed strainer
- Tahini Dressing:
- 1 cup quinoa
- 2 cups water
- 1/2 teaspoon fine grain sea salt
- 1 can garbanzo beans, or dried equivalent
- 1/2 cup cilantro, chopped
- 1/2 red onion, chopped
- 1 garlic clove, smashed and chopped
- 1/4 cup tahini
- Zest of one lemon
- 1/4 cup fresh lemon juice
- 2 tablespoons olive oil
- 2 tablespoons hot water
- 1/2 teaspoon fine grain sea salt
