Vegetables: Green Bean Casserole

Bake at 350 degrees until done
- 1 can French style green beans, washed and drained
- 1 can white shoe peg corn, washed and drained
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 1/2 cup chopped bell pepper
- Add 3/4 cup cheddar cheese
- 1 can cream of mushroom or celery soup
Vegetables: Broccoli Casserole

Cook broccoli until tender, drain
- 2 packages chopped frozen croccoli
- 1 can cream of mushroom soup
- 1 T grated onion
- 2 eggs
- 1 cup sharp cheddar cheese, grated
- 1 cup mayonnaise
- buttered bread crumbs
Cookies: Carrot Cake Cookies

- 1 cup light brown sugar, packed
- 1 cup granulated sugar
- 1/2 lb (2 sticks) unsalted butter, room temperature
- 2 large eggs, room temperature
- 1 t pure vanilla extract
- 2 cups all-purpose flour
- 1 t baking powder
- 1 t baking soda
- 1/4 t salt
- 1 t ground cinnamon
- 1/2 t ground nutmeg
- 1/2 t ground ginger
- 2 cups old fashioned rolled oats
- 1 1/2 cups finely rolled oats
- 1 1/2 cups grated carrots (about 3 large)
- 1 cup raisins
- Cream cheese frosting
Soups: Low Country Red Beans

Boil and reduce to simmer 2 1/2 - 3 hours
- Wash beans and cover with water. Soak overnight. Drain and cover with 3 quarts cold water.
- Add
- 3 ham hocks
- 1 garlic clove, crushed
- 2 bay leaves, whole
- Salt to taste
- 1 t white pepper
- 1 cup chopped onion
- 1/2 t cayenne or pepper sauce

- Topping:
- 1 1/2 cups Bob's Red Mill Gluten Free Pancake Mix
- 3/4 cup Light Vanilla Soy Milk
- 1/2 Pink Lady Apple
- 1 t Nutritional Flakes
- 1 t Cinnamon
- 1 t of Pumpkin or Apple Pie Spice
- 1 t Vanilla
- 1/2 Pink Lady Apple, finely chopped
- Caramel Sauce (see recipe for Raw Caramel)
- 100 % Pure Maple Syrup

- 1/2 cup water

- 1 box Duncan Hines Moist Deluxe Butter Golden Cake mix
- 1 stick of butter
- 1 cup sugar
- 1/4 cup chablis
- 1/4 cup water

Soups: Sarah Kathryn's Creamy Broccoli Soup (1/22/11 Real Simple)

Heat the oil in a large saucepan over medium heat
- 1 T olive oil
- 1 medium onion, chopped
- 1/8 t crushed red pepper
- 2 cups low sodium vegetable broth
- 1 bunch broccoli. florets roughly chopped and stems
- peeled and sliced ( about 7 cups)
- 1 large russet potato, peeled and cut into 1/2 inch pieces
- Kosher salt and lack pepper to taste
- 2 oz sharp white Cheddar grated (1/2 cup)
- Bagel chips, for serving
