Preheat oven to 325 degrees and line a baking sheet with parchment paper

  • 4 cups old-fashioned rolled oats
  • 1/4 cup whole wheat flour (I use rice flour)
  • 1/2 cup shredded unsweetened coconut
  • 1/3 cup packed brown sugar
  • 1 /cup chocolate chips (or raisins or other dried fruit)
  • 1/2 t kosher salt
  • 1/2 cup canola oil (I use Safflower oil)
  • 1 t vanilla extract
  • 1/2 cup honey

Sift sugar, flour, salt, cinnamon together and combine with sliced apples Mix together well and place in the bottom

  • For Topping:
  • 1/2 - 3/4 cup sugar
  • 1 T flour

  • 1/4 - 1/3 cup brown sugar
