Beef: Hamburger Crunch Casserole

Saute beef, add on. Cook till tender, drain
- 1 pound ground beef
- 1 small onion, chopped
- Dash pepper
- 1 can cream of chicken soup
- 1 can cream of mushroom soup
- 1/2 cup uncooked rice
- 2 T soy sauce
- 1 pkg of #300 chow mein noodles (5 ozs)
Seafood: Salmon with Ginger Salsa Recipe

In a bowl, mix first six ingreadients together to make a salsa
- 2 peaches or mangos, diced
- 1 large tomato, diced (drain juice)
- 4 green onions, chopped
- 2 T chopped fresh cilantro
- 2 t finely minced fresh gingerroot, or 1/2 t ground ginger
- 1 T balsamic vinegar
- Juice of 1 lemon
- 4 salmon steaks, 6 oz each

Vegetables: Zucchini Casserole

Wash and boil whole zucchini until just done (10 minutes)
- 8-10 medium zucchini
- 1/2 cup butter
- 3/4 cup grated cheddar cheese
- 1/4 cup grated Gruyere cheese
- 1 cup sour cream
- 1/2 t salt
- 1/8 t paprika
- 1/4 cup fresh chopped chives
- 1 About 1 cup bread crumbs
- Grated parmesan cheese
Soups: Spanish Black Bean Soup

Puree then boil. Serve over bed of rice
- 1 lb pinto beans
- Salt
- 1 onion
- Paprika
- Garlic powder
- Red pepper/chili powder
- Worcestershire sauce

In large pot, sauté the onions and carrot in the vegetable oil for 3-5 minutes until onions turn clear
- 1 t vegetable oil
- 1 onion, sliced
- 1 carrot, sliced
- 4 cups vegetable broth
- 1 cup dry lentils
- 1/4 t pepper
- 1/4 t dried thyme
- 2 bay leaves
- dash salt
- 1 T lemon juice

- 4 quarts ice or water
- 2 cups salt
- 1 cup sugar

- 3 bunch thyme, fresh
- 3 each yellow onion, peeled and chopped
- 3 stalks celery, sliced
- 3 each carrots, peeled and sliced
- 2 each lemon, quartered
- 4 each garlic cloves, peeled and sliced
