Seafood: Shrimp and Grits

- 3 cups white wine
- 1 t salt
- 2 stalks celery
- 1 t celery seed
- 1 clove garlic
- 1 t dill seed
- 1 bunch basil
- Grits
- 2 1/2 cups milk
- 1/2 cup regular grits
- 1/2 cup cheddar cheese, grated
- Garlic, salt and pepper to taste

- 2 large onions, diced
- 4 oz olive oil
- 2 lbs small shrimp, peeled

- 4 cups water
- Salt and pepper
- 1 cup stone ground grits
- 3 t butter
- 2 cups shredded cheddar cheese

- 6 slices bacon, chopped
- 4 t lemon juice
- 2 T chopped parsley

Desserts: Upside-Down Pecan Rolls

Distribute nuts over bottom of pan Pour syrup over nuts Put top side of rolls down Bake 250 degrees for 10 minutes
- 1/4 cup butter
- 3 T corn syrup
- 3/4 cup brown sugar
- 1/2 cup pecan halves
- 18 small party rolls (brown and serve)
Soups: Homemade Cream Soup Mix

Combine all ingredients or multiples thereof for larger batch, mixing well
- 2 cups powdered nonfat dry milk (or times 6)
- 3/4 cup cornstarch (4 1/2 c or 1 box)
- 1/4 cup instant chicken bouillon (1 1/2 cups or 1 jar of granules)
- 2 T dried onion flakes (optional) (X 6)
- 1 t basil leaves (2T)
- 1 t thyme leaves (2T)
- 1/2 t pepper (3 t)
- OR Per serving
- 1/3 dry milk
- 2 T cornstarch
- 1 bouillon cube
- shake of basil, thyme and pepper
- 1 1/4 cups water or broth
Vegetables: Cheesy Scalloped Potatoes

Place a rack in the top half of the oven and preheat to 375 degrees
- 2 cups milk
- 3 cloves garlic, smashed and peeled
- Salt
- 3 pounds baking potatoes, preferably Idaho, peeled and sliced, 1/4 inch thick
- 3 ounces Gruyere cheese, coarsely grated (about 3/4 cup)
- Pinch cayenne pepper
- Black pepper
- 1 cup heavy cream
- diced onions, optional

Place oven rack on lowest level, then preheat oven to 400 degrees
- 2 T butter, melted
- 1 roasting chicken (6-7 pounds)
- 1/2 t salt
- Choice of 4 harvest vegetables (carrots, onions, celery, parsnips, winter squash, sweet potatoes) peeled and cut into 3” chunks
- 1/2 t freshly ground black pepper
- 1/2 t dried rosemary
- 1/2 to 3/4 cup Bean’s Maple Syrup

- 1/2 cup mayonnaise
- 1/3 cup honey
- Waldorf Salad uses pineapple, oranges and marshmallows. Sour cream is used for dressing.

1 Combine all the ingredients in the bowl of a miniature food processor or a blender and blend until the dressing i
- 1 garlic clove, coarsely chopped
- 1/4 cup olive oil
- juice of half of lemon
- 1 T red wine vinegar
- 2 T water
- 1 t mustard (I use whole grain but Dijon works well too)
- 2 T finely grated Parmesan cheese
- 1/4 t dried basil
- 1/4 t dried thyme
- 1/4 t kosher salt
- 1/4 t freshly ground pepper
- Italian Dressing Mix
- 1 T garlic salt
- 1 T onion powder
- 1 T white sugar
- 2 T dried oregano
- 1 t ground black pepper
- 1/4 t dried thyme
- 1 t dried basil
- 1 T dried parsley
- 1/4 t celery salt
- 2 T salt
- Perfect Homemade Italian Dressing
- 1 cup of the vinegar (any type is fine, whether ACV, wine vinegar, rice vinegar, etc)
- 1 1/4 cup of olive oil or other oil (I usually do half olive oil, half cheaper oil)
- 2 T of water
- 1/2 T garlic powder
- 1/2 T onion powder
- 1/2 T honey, white sugar or sucanat
- 1 T dried oregano
- 1/2 t ground black pepper
- 1/4 t dried thyme
- 1/2 t dried basil
- 1/2 T dried parsley
- 1 T salt
