Poultry: Aunt Helen’s Chicken Salad

Boil chicken in bouillon and onion until tender
- 5-6 lbs chicken
- 2 cups chopped celery
- 2 cans mandarin oranges
- 2 cups chopped English walnuts
- Mayonnaise (Dukes or Hellmans)

1 Blend macadamia nuts, water, lemon juice, and salt in a blender until smooth
- 1 cup macadamia nuts, soaked overnight and drained
- 1 1/2 cups filtered water
- 1/4 cup lemon juice

- 1/4 cup seasoned dry bread crumbs
- 2 tablespoons chopped fresh flat-leaf parsley
- 1/2 cup freshly grated Parmesan cheese
- 2 teaspoons kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon ground nutmeg
