Soups: French Spring Soup

Heat butter or oil in a large dutch oven or stock pot over medium until shimmering
- 2 T butter (olive oil or coconut oil)
- 1 onion (medium, chopped)
- 3 leeks (baby, or 1 medium leek, thinly sliced, white and light green parts only)
- 1 small carrot (thinly sliced)
- 1 stalk celery (chopped)
- 1 red bell pepper (small, seeded and chopped)
- 4 oz shiitake mushrooms (sliced)
- 2 Yukon gold potatoes (small, peeled and diced)
- 1 baby boy chow (Shanghai boy chow, thinly sliced including leaves)
- 3 radishes (very thinly sliced)
- 10 asparagus spears (tender parts only, 1" pieces)
- 4 cups vegetable broth
- 1 t fish sauce (optional for vegan or vegetarian)
- 2 bay leaves
- 1 sprig fresh thyme leaves (leaves only)
- 3/4 cup quinoa
- sherry
- 1 cup light coconut milk
- 1 handful spinach leaves (stems removed, sliced chiffonade)
- croutons (small or homemade)
- sea salt
- cilantro (chopped for garnish)
Grandmother Foreman's Christmas Fruit Salad

Cut fruit, chop nuts and add all together
- 2 gala apples
- 2 oranges
- 2 pears
- 1 can unsweet crushed pineapple
- 1/3 cup basil nuts
- 1/3 cup walnuts
- 1/3 cup almonds
Leslie's Cucumber Relish

- 4 quarts grated cucumber
- 4 cups chopped onions
- 1/4 cup chopped hot pepper or
- 2 t crushed red peppers
- Cover with 2 cups salt. Let stand for 1 1/2 to 2 hours.
- Drain in colander. Don't rinse. Squeeze lightly with hands.
- Add:
- 4 cups sugar
- 1 pint vinegar
- 1 t dry mustard
- 1 t celery seed
- 1 t tumeric
- Cook on cook top covered for 20 minutes.
- Stir occasionally.
Eggs: Vivian Howard's Deviled Eggs Three Ways

Fill a medium pot halfway with water and prepare an ice bath
- 8 eggs
- 3 T butter, softened
- 2 T Duke's mayonnaise
- 2 t white wine vinegar
- 1/2 t sugar
- 1/4 t hot sauce
- kosher salt and freshly ground black pepper, to taste
- Variations:
- 2 T country ham, finely diced, plus more for garnish
- 2 t chow-chow
- 1 collard leaf, stem removed, thinly sliced and chopped
- sweet paprika, for garnish

- Icing
- 1/2 cup butter
- 2 oz chocolate
- 1 egg
- 1 1/2 cup powdered sugar
- pinch salt
- 1 t vanilla
- 1 cup nuts
- or
- 1 T butter
- 3/4 cup semi sweet chocolate chips
- 6 T heavy cream
- 1 1/4 cup 4X sugar
- 1 t vanilla
- DETAILS
- Cooking time 60mins
Beef: Barbecued Meatballs

To make meatballs, combine all ingredients (mixture will be soft) and shape into walnut size balls
- Sauce:
- 3 pounds ground beef
- 1 can evaporated milk
- 1 cup oatmeal
- 1 cup cracker crumbs
- 2 eggs
- 1/2 cup chopped onion
- 1/2 t garlic powder
- 2 t salt
- 1/2 t pepper
- 2 t chili powder
- 2 cups catsup
- 1 cup brown sugar
- 1/2 t liquid smoke or to taste
- 1/2 t garlic powder
- 1/4 cup chopped onion

In a mixing bowl combine all ingredients for crust
- Crust:
- 3 cups cashew flour
- 4 T honey
- 1 T coconut oil, melted
- Pinch sea salt
- Filling
- 1 cup chopped walnuts
- 1 cup cacoa ribs
- 1 1/2 cups shredded coconut
- 1 cup honey
- 1 t vanilla extract (or powder)
- 1 t sea salt

- Crust:
- 1 1/4 cups graham cracker crumbs
- 2 T sugar
- 2 oz melted butter
- Filling:
- 6 oz bittersweet baking chocolate
- 1/4 cup rum
- 1 lb cream cheese
- 3/4 cup extra fine sugar
- 1/2 cup sour cream
- 1 T vanilla extract
- 4 large eggs
Vegan: Leslie Taylorson's Philly Cheese Steak

To make the Philly Cheese steak, start with a whole Swiss Chard leaf or Corn Tortilla or any type of favorite torti
- In a bowl add:
- 2 Portobello mushrooms or 1 pkg of Baby Bellas, sliced
- 1/2 cup extra virgin col pressed olive oil
- 1/2 cup Tamari soy sauce
- 2 t cumin powder
- 1 t coriander powder
- 1 T Ume plum vinegar
- 12 cup white onion, chopped
- 1 clove garlic, minced
- Set aside and let marinade
- Vegetables:
- In a separate bowl add:
- 1 red or yellow bell pepper, seeded and sliced
- 1 cup broccoli, chopped
- Add all your favorite raw veggies from here
- Cheese:
- In a blender, add:
- 1 cup pine nuts
- 1/2 cup sunflower seeds
- 2/3 T apple cider vinegar
- 1/4 cup onion
- 1/12 cup distilled water
- Blend until creamy
