Cheesecake Pops

- 5 8-oz. packages cream cheese at room temperature
- 2 cups sugar
- 1/4 cup all-purpose flour
- 1/4 teaspoon salt
- 5 large eggs
- 2 egg yolks
- 2 teaspoons pure vanilla extract
- 1/4 cup heavy cream
- Boiling water as needed
- Thirty to forty 8-inch lollipop sticks
- 1 pound chocolate, finely chopped – you can use all one kind or half and half of dark, milk, or white (Alternately, you can use 1 pound of flavored coatings, also known as summer coating, confectionar
- 2 tablespoons vegetable shortening
- (Note: White chocolate is harder to use this way, but not impossible)
- Assorted decorations such as chopped nuts, colored jimmies, crushed peppermints, mini chocolate chips, sanding sugars, dragees) - Optional
Miracle Whip Cake

My favorite chocolate cake! Very moist
- Mix together:
- 2 cups flour
- 2 tsp. baking soda
- 1 cup white sugar
- 4 tbsp. cocoa
- 1/2 tsp. salt
- Mix the following and add to the above.
- 1 cup miracle whip (not lite nor mayonnaise)
- 1 cup cold coffee
- 1 tsp vanilla
Dinner - Skillet Salmon & Parmesan Pototoes

Cook potatoes at 400 degrees on BAKE
- 1 (6-oz) salmon fillet (about 1-inch thick)
- cooking spray
- 2 medium potatoes
- salt and pepper, to taste
- 4 tbsp shredded Parmesan cheese
- 2 cups mixed salad greens
- 1 cup chopped tomatoes
- 2 tbsp low-fat balsamic vinaigrette

Italian Meatloaf (with Carrots)

This is a perfect place to use a food processor to save time
- Nonstick cooking spray
- 1 cup Italian-style breadcrumbs (seasoned)
- 1/2 cup nonfat skim milk
- 2 tablespoons olive oil
- 1/2 onion , finely chopped
- 2 stalks celery , finely chopped
- 1 pound lean ground turkey
- 1/2 cup grated Parmesan
- 1/2 cup carrot puree
- 1/4 cup ketchup
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 1 cup bottled tomato sauce
- 4 slices turkey bacon

- 1 1/2 c. speghetti, broken
- Combine 2 cups cut up leftover turkey
- 1/3 cup chopped green pepper
- 1/3 cup sliced green onion
- 1/4 cup diced pemento
- 1 can cream mushroom soup
- 1/2 cup water
- 1/2 tsp. salt and pepper

Directions Preheat oven to 350ºF
- 2 sprays cooking spray
- 1 1/2 pounds uncooked boneless, skinless chicken breast, thinly pounded (six 4-oz pieces)
- 3 large egg whites, lightly beaten
- 3/4 cup dried bread crumbs
- 1 1/2 Tablespoons Italian seasoning, (or make your own blend)
- 3/4 teaspoon table salt, or to taste
- 2 teaspoons olive oil
- 14 ounces canned tomato sauce, (1 14-oz. can)
- 3/4 cup part-skim mozzarella cheese, shredded
- 3 Tablespoons grated Parmesan cheese

1. Mash the feta with the vinegar and herbs with a fork until fairly smooth
