Tandoori Chicken Peggy Perry

This classic East Indian dish is designed to be cooked in a standard oven or on the barbeque
- 3 - 4 lbs of chicken
- 1 tsp ground pepper
- 1 tbsp cayenne
- 4 tbsp fresh lemon juice
- 2 medium onions, chopped
- 3 - inch piece of ginger, peeled and chopped
- 6 large cloves of garlic, peeled
- 2 tsp whole coriander seeds
- 1 tbsp whole cumin seeds
- 1 tbsp cayenne
- 1 cup yogurt
- 2 tbsp butter
Dijon-Roasted New Potatoes (4 pts)

Coating the potatoes with mustard and a small amount of oil helps make them crispy outside and tender inside
- cooking spray
- 2 tbsp Dijon mustard
- 1 tsp olive oil
- 3/4 tsp paprika
- 1/2 tsp table salt
- 1/4 tsp dried thyme
- 1/4 tsp black pepper
- 1 1/2 lbs uncooked red or white new potatoes, quartered and halved
Pineapple Delight

Roll cookies until finely crushed
- 1 pkg Dad's Oatmeal Cookies (20 cookies)
- 1/2 cup butter
- 2 eggs
- 1/2 cup icing sugar
- 1/2 cup white sugar
- 1 cup drained crushed pineapple
- 1 cup whipping cream- whipped
Pan-Fried Tilapia with White Wine And Capers

Combine first 6 ingredients, stirring well with a whisk, set aside
- 1/4 cup white wine, dry
- 1/4 cup tomatoes, seeded and chopped
- 2 tbsp fresh lemon juice
- 2 tbsp capers, drained
- 1 medium clove garlic, minced
- 1/2 tsp basil
- 1 1/2 pound fish
- 1/2 tsp salt
- 1/4 tsp black papper, freshly ground
- 1/4 cup flour

- 2 tbsp light butter
- 2 tbsp parlsey, chopped

Fregola with Wild Mushrooms, Sherry, and Cream

Fregola is a tiny toasted pastya from Sardinia; you can substitute andy tiny pasta for it, but toast it first
- Serves 6 as a side dish or 3 to 4 as a first course.
- 3/4 pound fresh wild mushrooms
- 1 1/2 tbsp unsalted butter
- 1 1/2 tbsp olive oil
- Kosher salt
- 2 medium shallots (4 oz) finely diced
- 1/2 tbsp chopped fresh thyme
- 3 tbsp dry sherry
- 1 cup heavy cream
- Freshly ground black pepper
- 2 tbsp coursely chopped parsely
- 1 1/4 cups pasta
- 1/2 cup freshely grated Parmigiano-Reggiano, for serving

- Sauce
- 1 clove garlic cut in half
- 1/4 cup light coconut milk
- 1/4 cup sweet potato puree
- 3 Tbsp. natural creamy peanut butter
- 2 Tbsp. reduced-sodium soy sauce
- 2 Tbsp. lime juice (about 1 large lime)
- Pinch cayenne pepper
- Skewers
- 1 1/2 pound boneless, skinless chicken breasts
- 30 10-inch wooden skewers

Paillard is an older term referring to the quick cooking of thinly sliced/thinly pounded pieces of meat
- 4 * 4 chicken paillards (from 2 breast halves)
- * Salt and pepper
- 1 * 1 tablespoon extra-virgin olive oil
- 1 * 1 tablespoon plus 2 to 3 tablespoons unsalted butter
- 1/4 * 1/4 cup minced or sliced shallot
- * Segments and juice of 2 lemons
- 3/4 * 3/4 cup low-sodium chicken stock

I added mushrooms to this recipe and think it would be just as good with just the mushrooms
- 3 tbsp all-purpose flour
- 1/4 tsp salt
