- 3 (5-pound) roasting chickens
- 3 large yellow onions, unpeeled and quartered
- 6 carrots, unpeeled and halved
- 4 stalks celery with leaves, cut into thirds
- 4 parsnips, unpeeled and cut in half, optional
- 20 sprigs fresh parsley
- 15 sprigs fresh thyme
- 20 sprigs fresh dill
- 1 head garlic, unpeeled and cut in 1/2 crosswise
- 2 tablespoons kosher salt
- 2 teaspoons whole black peppercorns
Garlic-Jalapeno Shrimp

- 20 large shrimp (about 1 lb), peeled and deveined (tails left intact; optional)
- 3 garlic cloves, minced

Coconut Curry

This is a quick and simple curry that can be used with meats, seafood or vegetables
- 1/2 tsp saffron (optional)
- 1/4 cup very hot water (optional)
- 1/3 cup cooking oil
- 1 tbsp cumin seeds or black mustard seeds
- 2 tbsp finely chopped garlic (6 medium cloves)
- 1 tsp turmeric
- 1 1/2 tsp salt
- 1 tsp ground cayenne pepper
- 2 tsp paprika (optional)
- 5 cups coconut milk
- 2 cups stock (chicken or vegetable)
- 1/2 cup chopped cilantro (optional)

Pork Paillards with sour cream - paprika sauce

Paillard is an older term referring to the quick cooking of thinly sliced/thinly pounded pieces of meat
- 16 * 16 pork paillards
- * Salt and pepper
- 2 * 2 tablespoons grapeseed oil or safflower oil
- 1/4 * 1/4 cup dry white wine
- 1/2 * 1/2 cup low-sodium chicken stock
- 1/3 * 1/3 cup sour cream (or more to thicken)
- 1/4 * 1/4 teaspoon sweet or smoked paprika
Lemon Chicken

- 4 skinless, boneless, chicken breasts
- 3 tbsp. fresh lemon juice
- 4 cloves of garlic, chopped

- 1/2 c. bresh basil

- 1 (14 ounce) can artichoke hearts, drained and chopped
- 1 cup mayonnaise
- 1 (8 oz) block cream cheese
- 1 cup shredded mozzarella
- dash of hot sauce
- dash Worcestershire sauce
- salt and pepper to taste
