Buttermilk Dressing

Whisk together first 3 ingredients
- 1/3 cup buttermilk
- 3 Tbls. mayo
- 2 tsp. white-wine vinegar
- 1 tsp. dried basil or 1 Tbls. chopped fresh basil
- Pinch of dill weed
- Salt and pepper to taste
Sweet Potato Wedges

Peel and cut into wedges. Brush with oil and sprinkle with spices
- Seasoning:
- 4 large sweet potatoes
- 4 Tbls. vegetable oil (1 Tbls. per potato)
- 1 tsp. thyme
- 1/2 tsp. cracked rosemary
- 1/4 tsp. ground cumin
- 1/4 tsp. pepper
- 1/4 tsp. kosher salt (optional)
- OR
- 2 tsp. Northwoods seasoning
Spicy Grilled Beer Chicken

In medium bowl, combine beer, garlic, butter, chili powder, sugar, and salt
- 1 – 12 oz. can or bottle of beer, room temperature
- 2 cloves garlic, minced
- 1/4 cup butter, melted and cooled
- 1 Tbls. chili powder
- 1 Tbls. brown sugar
- 1 tsp. salt
- 2 large bone-in skin-on chicken breasts or 6 chicken drumsticks
Chocolate-Dipped Potato Chips

- Wax paper

Chicken Gnocchi Soup

This is a take off of the Olive Garden recipe - I reduced half-n-half from original recipe, added milk and a rue to
- 1/2 onion, diced
- 1 stalk celery, diced
- 1 clove garlic
- 1/2 carrot, shredded
- 1 Tbls olive oil
- 2 cups cooked chicken breast, diced
- 4 cups chicken stock
- Salt and pepper, to taste
- 1 tsp dried thyme
- 16 oz pkg potato gnocchi
- 1/2 cup half-and-half
- 1/2 cup 2% milk
- 1 cup fresh spinach, chopped
- 2 Tbls butter
- 2 Tbls flour
Orange-Balsamic Glazed Chicken

- 2 tablespoons extra-virgin olive oil
- 2 pounds boneless skinless chicken thighs or breasts or any combination of light and dark meat
- Salt and freshly ground black pepper
- 1 teaspoon poultry seasoning
- 2 to 3 sprigs fresh rosemary, leaves chopped
- 1/3 cup orange marmalade
- 1/4 cup balsamic vinegar
- 1/2 cup chicken stock
- 2 scallions, whites and greens, finely chopped
- 4 cups baby arugula
Steakhouse Chili

In a large pot or Dutch oven, heat the EVOO, 1 turn of the pan, over medium-high heat
- 1 tablespoon extra-virgin olive oil (EVOO)
- 4 slices lean, smoky bacon, finely chopped
- 2 pounds ground sirloin beef
- 1 large onion, finely chopped
- 3 cloves garlic, finely chopped
- 4 tablespoons chili powder
- Salt and pepper
- One 15-ounce can tomato sauce
- 1/3 cup Worcestershire sauce
- 1/4 cup dark brown sugar
- 2 tablespoons hot pepper sauce
- 2 cups beef stock
- Sour cream, for topping
- 1/2 cup finely chopped flat-leaf parsley, for topping

Apple Crisp 13x9

Heat oven to 375°F. Lightly grease a 13x9 glass pan
- 8 apples or 8 peaches, peeled
- 1 1⁄2 cups brown sugar
- 1 cup flour
- 1 cup oats
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 ⁄2 cup cold butter
- NOTE: Substitute 2 tsp apple pie spice for the cinnamon/nutmeg mixture if you want a more traditional taste
Vanilla Rum Colas
