Pineapple-Coconut Cupcakes with Buttermilk-Cream Cheese Frosting

- Vegetable cooking spray
- 3 large eggs
- 1 (8-oz.) container sour cream
- 1/3 cup buttermilk
- 1/3 cup cream of coconut
- 1/2 teaspoon vanilla extract

- PINEAPPLE FILLING
- 2 - 8 oz. cans crushed pineapple in juice, undrained
- 1/4 cup sugar
- 2 Tbls. cornstarch

- Birds' nests: egg-shaped chocolate-coated malted milk balls; shredded coconut dyed green with food-coloring

- Pinch of salt
- 2 Tbls EVOO
- 3 cloves garlic, sliced
- 1-1/2 grated Parmesan cheese
- 1/2 lemon
Beef Ragu - Slow Cooker

In a 5-to-6-quart slow cooker, combine onion, garlic, tomato paste, and oregano
- 1 medium yellow onion, diced small
- 3 garlic cloves, minced
- 6 tablespoons tomato paste
- 3 tablespoons chopped fresh oregano leaves (or 3 teaspoons dried)
- 1 beef chuck roast (4 pounds), halved
- Coarse salt and ground pepper
- 1 to 2 tablespoons red-wine vinegar
Cajun Lemonade

Stir together first 3 ingredients
- 2 cups light rum
- 1 can (12 oz) frozen lemonade concentrate, thawed
- 1 tsp hot sauce (such as Tabasco)
- 1 liter club soda, chilled
- Crushed ice
Green Beans with Orange Beurre Blanc

Blanch green beans in boiling salted water for 3 mins
- 3/4 lb green beans
- 1/2 medium sized shallot
- 1 Tbls white wine vinegar
- 2 Tbls dry white wine
- 8 Tbls cold unsalted butter
- 2 Tbls frozen orange juice concentrate
- 1/2 tsp salt
- 1/4 tsp freshly ground pepper
Espresso Martini

- 2 oz. espresso or strong coffee (cooled)
- 2 oz. orange vodka
- 1 oz. Kahlua
- Orange peel for garnish (optional)

- 1 pkg (4 oz) ranch salad dressing mix
- 1/2 cup minced sweet red pepper
- 1/2 cup minced bacon, cooked crisp
- 1/4 cup green onions
- 1/4 cup stuffed green olives
- 3-4 flour tortillas (10 inch)
