Do-Ahead Mashed Potatoes

Scrub potatoes. Leave skins on, if desired, or peel thinly and remove eyes
- 9 medium potatoes (3 pounds)
- 3/4 cup milk
- 1/2 cup whipping (heavy) cream
- 1/2 cup butter or margarine
- 1 teaspoon salt
- 1/8 teaspoon pepper
Spinach Gratin

Preheat an oven to 400°F
- 3 Tbs. unsalted butter, plus more for greasing
- 1 cup fresh bread crumbs
- 1/3 cup grated Parmigiano-Reggiano cheese
- 2 tsp. vegetable oil
- 2 lb. baby spinach
- 2/3 cup heavy cream
- 2/3 cup half-and-half
- 1/4 cup diced yellow onion
- 1 Tbs. plus 1 tsp. all-purpose flour
- 1 clove
- Pinch of freshly grated nutmeg
- 1 bay leaf
- 1 fresh thyme sprig, plus leaves from 1 thyme sprig
- 1/2 cup grated Emmentaler cheese

Warm Molten Chocolate Cakes

Preheat an oven to 400°F
- bittersweet chocolate, finely chopped
- 4 Tbs. (1/2 stick) unsalted butter, cut into pieces
- 1 tsp. vanilla extract
- Pinch of salt
- 4 egg yolks
- 6 Tbs. sugar

German-Style Beef Roast

- 1 2-1/2- to 3-pound boneless beef chuck pot roast
- 1 tablespoon cooking oil
- 2 cups sliced carrots (2)
- 2 cups chopped onions (2 large)

Creamy Mac and Cheese

Boil the macaroni in a 2 quart saucepan in plenty of water until tender, about 7 minutes
- 2 cups uncooked elbow macaroni (an 8-ounce box isn't quite 2 cups)
- 4 tablespoons (1/2 stuck) butter, cut into pieces
- 2 1/2 cups (about 10 ounces) grated sharp Cheddar cheese
- 3 eggs, beaten
- 1/2 cup sour cream
- 1 (10 3/4-ounce) can condensed Cheddar cheese soup
- 1/2 teaspoon salt
- 1 cup whole milk
- 1/2 teaspoon dry mustard
- 1/2 teaspoon black pepper

- 1 cup cottage cheese
- 1 cup sour cream
- 1 tsp. salt, pepper to taste
- 3/4 cup cheddar cheese, grated
- 1 8 oz. can tomato sauce
- 2 tbsp. butter
- 6 green onions
- 1/8 tsp. garlic salt
Caesar Roasted Fish

Preheat the oven to 500 degrees F
- 2 large garlic cloves, chopped
- 1/4 cup chopped fresh parsley
- 1 tablespoon anchovy paste
- 2 teaspoons Dijon mustard
- 1 cup good mayonnaise
- 1 tablespoon grated lemon zest (2 lemons)
- 3 tablespoons freshly squeezed lemon juice
- Kosher salt and freshly ground black pepper
- 3 pounds striped bass steaks, 3/4 to 1 inch thick, cut into 6 portions
- 1/2 cup chopped scallions, white and green parts (4 scallions)
- 2 tablespoons good olive oil
- 3 tablespoons drained capers
- Lemon wedges, for serving
