Lasagna with Turkey Sausage Bolognese

Heat oil in large nonstick skillet over medium-high heat
- 2 tablespoons olive oil
- 2 cups chopped onions
- 1/2 cup diced carrot
- 1 tablespoon fennel seeds, crushed in spice mill or in mortar with pestle
- 1 pound spicy Italian turkey sausages, casings removed
- 3 large garlic cloves, pressed
- 1/2 cup dry white wine
- 5 cups crushed tomatoes with added puree (from two 28-ounce cans)
- 1 cup chopped fresh basil, divided
- 2 tablespoons chopped fresh oregano
- 1 15-ounce container whole-milk ricotta cheese
- 3 cups (packed) coarsely grated whole-milk mozzarella cheese (12 ounces)
- 1 1/4 cups freshly grated Parmesan cheese, divided
- 16 6 1/2x3 1/4-inch no-boil lasagna noodles

Preheat the oven to 400 degrees F
- For the filling:
- 12 tablespoons (1 1/2 sticks) unsalted butter, at room temperature
- 1/3 cup light brown sugar, lightly packed
- 1/2 cup pecans, chopped in very large pieces

Classic Ragu Bolognese

Heat oil in a large heavy pot over medium-high heat
- 2 Tbsp. extra-virgin olive oil
- 2 medium onions, finely chopped (about 1 1/2 cups)
- 2 celery stalks, finely chopped (about 1 cup)
- 2 carrots, peeled, finely chopped (about 3/4 cup)
- 6 oz. ground beef (85% lean)
- 6 oz. ground veal
- 3 oz. thinly sliced pancetta, finely chopped
- 1/2 cup dry red wine
- 3 cups (about) beef stock or chicken stock, divided
- 3 Tbsp. tomato paste
- Kosher salt and freshly ground black pepper
- 1 cup whole milk
- 1 lb. tagliatelle or fettuccine (preferably fresh egg)
- Finely grated Parmesan (for serving)

Preheat oven to 350. Mix thouroughly flour, butter and icing sugar
- 1 cup flour

- 1/4 cup icing sugar
- 2 eggs

- 2 pounds Idaho potatoes, peeled and cut into chunks
- Salt
- 1/2 tablespoons extra-virgin olive oil
- 4 slices good quality bacon or peppered bacon, chopped
- 2 pounds ground sirloin
- 1 onion, chopped
- 1/2 pound button mushrooms, quartered
- Black pepper
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 1/2 cups beef stock
- 2 tablespoons Worcestershire sauce
