Shrimp Bisque

Place the shrimp shells and seafood stock in a saucepan and simmer for 15 minutes
- 1 pound large shrimp, peeled and deveined, shells reserved
- 4 cups seafood stock
- 3 tablespoons good olive oil
- 2 cups chopped leeks, white and light green parts (3 leeks)
- 1 tablespoon chopped garlic (3 cloves)
- Pinch cayenne pepper
- 1/4 cup Cognac or brandy
- 1/4 cup dry sherry
- 4 tablespoons (1/2 stick) unsalted butter
- 1/4 cup all-purpose flour
- 2 cups half-and-half
- 1/3 cup tomato paste
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
Pineapple Carrot Cake

Preheat the oven to 350 degrees F
- For the cake:
- 2 cups granulated sugar
- 1 1/3 cups vegetable oil
- 3 extra-large eggs, at room temperature
- 1 teaspoon pure vanilla extract
- 2 1/2 cups plus 1 tablespoon all-purpose flour, divided
- 2 teaspoons ground cinnamon
- 2 teaspoons baking soda
- 1 1/2 teaspoons kosher salt
- 1 cup raisins
- 1 cup chopped walnuts
- 1 pound carrots, grated
- 1/2 cup diced fresh pineapple
- For the frosting:
- 3/4 pound cream cheese, at room temperature
- 1/2 pound unsalted butter, at room temperature
- 1 teaspoon pure vanilla extract
- 1 pound confectioners' sugar, sifted
- For the decoration:
- 1/2 cup diced fresh pineapple
Cheesy Meatloaf

Position a rack in the lower third of an oven and preheat to 350°F
- 4 Tbs. extra-virgin olive oil
- 2 carrots, cut into 1/4-inch dice
- 2 celery stalks, cut into 1/4-inch dice
- 1 onion, cut into 1/4-inch dice
- 1/2 oz. dried wild mushrooms, soaked in 1 cup hot water,
- chopped, soaking liquid reserved
- 3 garlic cloves, minced
- 2 1/4 cups fresh bread crumbs
- 1 Tbs. plus 1/4 cup minced fresh flat-leaf parsley
- 2 oz. mozzarella cheese, shredded, plus 6 oz., cut into 1/2-inch cubes
- Salt and freshly ground pepper, to taste
- 2 lb. ground beef (80% lean)
- 2 eggs, lightly beaten
- 1/2 tsp. minced fresh thyme
- Mashed potatoes for serving (see related recipe at left)
Avocado Corn Salsa

place the avocado in bottom of medium mixing bowl and gently toss with lime juice
- 1 ripe avocado, diced
- 2-3 tsp lime juice
- 1 ripe red tomato
- 1 ear corn, shucked
- 1 scallion, finely chopped
- 1 jalapeno pepper, seeded and minced
- 1/4 cup cilantro, chopped
- salt and pepper to taste
Cauliflower Mac & Cheese

Preheat an oven to 375ºF
- 3 cups coarse fresh bread crumbs
- 2 Tbs. unsalted butter, melted
- 1/4 cup minced fresh flat-leaf parsley
- Kosher salt and black pepper, to taste
- 8 oz. pancetta, julienned
- 1 1/2 lb. cauliflower, cut into 1/2-inch florets
- 3 to 6 Tbs. unsalted butter
- 1/4 cup all-purpose flour
- 2 Tbs. white wine
- 3 1/2 cups milk
- 2 cups shredded fontina cheese
- 3 cups shredded Gouda cheese
- 1/8 tsp. cayenne pepper
- 1/8 tsp. freshly grated nutmeg
- 1/2 cup heavy cream
- 1 lb. fresh macaroni, cooked until al dente
Lobster Mac and Cheese

Preheat the oven to 375 degrees F
- Kosher salt
- Vegetable oil
- 1 pound cavatappi or elbow macaroni
- 1 quart milk
- 8 tablespoons (1 stick) unsalted butter, divided
- 1/2 cup all-purpose flour
- 12 ounces Gruyere cheese, grated (4 cups)
- 8 ounces extra-sharp Cheddar, grated (2 cups)
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon nutmeg
- 1 1/2 pounds cooked lobster meat
- 1 1/2 cups fresh white bread crumbs (5 slices, crusts removed)
Chocolate Pecan Pie

Heat oven to 375ºF. In medium bowl, mix flour and 1/4 teaspoon salt

- 1 cup Gold Medal® all-purpose flour
- 1/4 teaspoon salt
- 1/3 cup plus 1 tablespoon shortening or 1/3 cup lard
- 2 to 3 2 to 3 tablespoons cold water
- Pecan Filling
- 2/3 cup sugar
- 1/3 cup butter or margarine, melted
- 1 cup corn syrup
- 2 tablespoons bourbon, if desired
- 1/2 teaspoon salt
- 3 eggs
- 1 cup pecan halves or broken pecans
- 1 bag (6 ounces) semisweet chocolate chips (1 cup)
Osso Buco

Put the flour in a wide, shallow bowl and season with salt and pepper
- 3/4 cup unbleached all-purpose flour
- Salt and freshly ground pepper, to taste
- 6 veal shanks, about 6 lb. total, cut crosswise 1
- inch thick
- 1/2 cup extra-virgin olive oil
- 1 yellow onion, coarsely chopped
- 2 carrots, peeled and diced
- 2 garlic cloves, minced
- 1 1/2 cups dry red wine
- 2 Tbs. veal demi-glace
- 4 cups beef stock
- 1 fresh rosemary sprig

Strawberry Scones

- 4 cups plus 1 tablespoon all-purpose flour
- 2 tablespoons sugar, plus additional for sprinkling
- 2 tablespoons baking powder
- 2 teaspoons salt
- 3/4 pound cold unsalted butter, diced
- 4 extra-large eggs, lightly beaten
- 1 cup cold heavy cream
- 3/4 cup small-diced dried strawberries
- 1 egg beaten with 2 tablespoons water or milk, for egg wash
